Im a creature of habitI get stuck in ruts. Many people, after they find out about Rachel Cooks, have made comments about how well we must eatgourmet food every night!
Its not exactly the case. I have my go-to recipes and more often than not, Im whipping up something weve had before and something that takes 30 minutes or less to make. Sure, I love to develop new recipes to share with you guys, but our life is just as busy as anyone elses, so sometimes its just a matter of speed and making something everyone likes. Well, everyone except N because that kid still likes NOTHING.
We have salmon about every other week and my lemon salmon with dill recipe is my go-to. Ben loves it, I like it, its healthy and its so easy. We both LOVE the walnut crusted salmon and Parmesan and almond crusted salmon but since the kids are allergic to tree nuts, thats obviously not a recipe thats in regular rotation.
Ive been wanting to try out a new salmon recipe on the grill, so when Traeger sent me one of their beautiful grills , salmon had to happen.
Now, I will say, you dont need a Traeger grill to make this salmon recipe, but it will take the flavor to the next level.
Grilled Salmon Marinade Ingredients
To marinate salmon for grilling, make my easy salmon marinade:
- Olive oil I chose extra virgin olive oil for flavor, but avocado oil is suitable here too.
- Lemon juice The acid helps to tenderize the salmon, plus the tang of citrus pairs very well with fish.
- Maple syrup I use Wholesome Yum Keto Maple Syrup, which is naturally sweetened, sugar-free, and tastes just like real maple syrup. But you can use regular too if that works for you.
- Fresh herbs I used dill and parsley, as these summer herbs work well on fish. Look for bright, leafy herbs that arent turning yellow. Dark green will have the most flavor. You could use dried herbs in a pinch , but for salmon fresh herbs work best.
- Garlic Use fresh minced garlic, or jarred to save a few minutes.
- Sea salt Salt helps the marinade penetrate into the fish.

What Temperature To Cook Salmon
The FDA advises salmon should be cooked to an internal temperature of 145 degrees Fahrenheit, HOWEVER, if you cook your salmon to this temperature, it will be dry, chalky and overdone due to the carry over meaning the salmon will continue to cook once it is removed from the heat source.
Americas Test Kitchen, on the other hand, advises cooking salmon to 125-130 degrees F to avoid overcooked salmon. I like to cook my salmon somewhere in between, to about 130-135 degrees F which always results in perfectly juicy salmon after a 5-minute rest. During the 5-minute rest, the salmon will continue to cook once pulled from the grill and rise about 5 degrees. Always take this carry over into consideration when taking the temperature of your salmon or any protein.
Want To Make Salmon Packets With Vegetables
This grilled salmon in foil recipe can easily be made into individual salmon foil packets with veggies. Before marinating, slice the raw salmon into individual fillets and make a packet for each person, plan on 1-2 fillets per pouch. Make sure to leave room for some veggies.
Lightly grease the foil, add the salmon fillet, then pour the marinade over top. Marinate at room temperature for 30 minutes before adding the butter and veggies of choice. You will want to use quick cooking vegetables such zucchini, summer squash, asparagus, or cherry tomatoes. Avoid longer cooking vegetables such as carrots, broccoli or potatoes unless you par-boil or steam them first. Seal up the foil packet and grill per recipe instructions.

When Is Grilled Salmon Done
A common recommendation for fish is that its done when it flakes easily with a fork, but its also easy to overcook it this way. For best results, use a meat thermometer to ensure perfectly cooked salmon and check the internal temperature every couple of minutes after you flip it:
- Medium rare 125 degrees F
- Medium 130 degrees F
- Medium well 140 degrees F
Let the salmon rest for 3-5 minutes before serving, as the internal temperature will rise 3-5 more degrees while resting.

Grill the salmon on a 450°-500° F hot grill. The number one way to ensure success when grilling fish is a smoking hot grill. Cook for skin side down for about 6-8 minutes on hot grates to ensure the fish wont stick to the grates and will lift easily away once its done.
Oil the fish, not the grill. Contrary to popular belief, theres no need to oil the grill grates. How Long To Cook Salmon On The Grill
The salmon cooks in about 7 minutes on an outdoor grill and if you want to be done right there, go for it.
However, because I love it when the top and edges are slightly browned, I pop it under my oven broiler for 5 minutes. This is totally optional and is more for the texture and visual aspects.
A little color on the edges helps the photographs look nicer and I am a texture junkie with all food.
I dont risk adding color from the grill because I am scared to flip the salmon over at this point in the cooking process. First, there is way too much precious buttery juice that would leak. Secondly, the salmon is fall-apart-tender and it could quite literally just fall apart on the grill grates. The broiler feels much safer.

Ways To Prevent Sticking To The Grill
Some people complain about salmon sticking to the grill. The biggest contributor to that problem? Dont try to turn it too soon! When the salmon is cooked just enough, it releases from the grill grates, making it easy to flip. But if you touch it before that time, it can stick and break apart. You dont need to oil the grill grates. Just lightly oil the fish, and when cooking wait until the salmon is easy to release . Then its easy to flip!
Another tip: make sure to cook with skin on salmon. This helps it to stay together on the grill. Salmon with the skin off easily sticks to the grill. We dont recommend using it here.
