How To Make Juicy Burgers On The Grill

Best smash burger recipe

Of course, nothing beats smoky, juicy burgers on the grill. The process for how to make juicy burgers on the grill is very similar to stovetop burgers.

Prepare the meat like above while you heat up the grill. Once its hot, add the burgers and close the lid. Resist the urge to open it too often!

Flip the burgers after about 4 or 5 minutes. The signs are the same clear or brownish juices. After flipping, cook for a few more minutes. The time will vary depending on thickness and how much you want them done. More on that below!

Just like stovetop burgers, the tips below will apply to making juicy burgers on the grill, too.

Shape Those Burgers Right

When forming a burger for the grill, aim for a ¾ to 1 thickness and a 3 to 4 diameter. The burgers will shrink slightly as they cook, so you want the raw patties to skew a little larger than the buns onto which theyll eventually land. Make a small dimple in the center of the pattythis indentation will prevent your burger from puffing up like a balloon, ensuring an even and picturesque patty. Work quickly but gently, and dont compress the patty too much: The enemy of any burger is overworked meat.

First Off You Gotta Make Your Own Burger Patties

Before diving into the list of best burgers to make at home, you need to know that you can make your own burger patty in less than 5 minutes!

Sure, buy premade burger patties if youre in a rush. .

But my favorite recipe for homemade hamburger patties is super easy. It makes 4 half-pound patties .

How To Check A Burgers Internal Temperature

The most accurate way to check a burgers doneness is by using an instant read thermometer inserted into the side of the patty. A thermometer inserted in the top of the patty isnt as accurate because its difficult to ensure the sensor is reading the coldest part of the patty. Inserting it directly into the side takes the guesswork out.

Another way to tell if the burger is done: Follow the finger test to get a basic idea of how cooked the patty is. A patty cooked to medium has some resistance while a well-done patty feels firm.

And dont forget to let those burgers rest! Once the burgers have been pulled off the grill, set them on a plate and let rest for a minute to allow the internal juices to redistribute throughout the patty.

About Ground Meat For Hamburgers

Using 80/20 ground beef is an easy answer. Most of us will start with store-bought ground beef, which is fine. I find ground chuck or sirloin has more flavor than other versions.

Leaner will not be as moist, and you are going for taste here. Do not use hamburger meat.

Most burger gurus suggest 20% fat for the moistest, most tasty burger. I think they are right. Fat does taste good.

STEP 1: Place the ground beef in a large mixing bowl.

STEP 2: Add the garlic powder, onion powder, salt, pepper, and Worcestershire sauce.

STEP 3: Gently mix the spices into the ground beef. Be careful not to overmix the meat, because that can lead to your burgers falling apart while cooking.

STEP 4: Form the meat into a large patty and place it on a cutting board.

STEP 5: Cut the patty into 4 equal triangles, and then shape each triangle into a hamburger patty. Each patty should be about 6 ounces. Use a food scale to weigh each one to ensure they are all about the same size.

STEP 6: Use either your thumb or the back of a spoon, and press it into the center of each hamburger patty. This ensures it from bulging while cooking.

STEP 7: Place the patties into the fridge until ready to cook.

Using A Charcoal Vs Gas Grill

Grilled Burgers with Curry Mustard Recipe

The charcoal vs gas grill debate is long and storied, and they both have their pros and cons. Gas grills heat up more quickly, and its easier to control the heat by turning a knob. On the downside, they tend to have hot spots, so youll need to move the burgers around the grill to make sure they all cook evenly. A charcoal grill can infuse more smoky flavor into your burgers, but it takes longer to heat up and learning how to adjust the vents to increase or decrease the heat is a process.

In the end, any type of grill will make a delicious burger, so use the one youre most comfortable with.

Cast Iron Skillet Cooked Burgers

When making indoor cooked burgers, cast iron skillet is definitely my preference. I specifically like to make burger sliders inside for happy hours and for my toddler.

They cook up very fast with some butter and/or olive oil in the pan to give them a tasty outer crust.

For now, see my recipe for pan grilled chicken which you can make into sliders until I add my best cast iron burger recipe on here.

Lipton Onion Soup Burger

Using Lipton onion soup mix to flavor a burger may not be your first instinct, but that doesnt mean it isnt genius.

Incorporating a pre-made spice blend makes sense if you think about it. Plus, this has onions in the mix, which boosts the taste to 11.

This also eliminates the struggle of creating a blend of your own.

Since you cant taste a raw burger, its hard to know if you need more salt or paprika. But this way, the ratios are already set. Win-win!

Tips For Making A Butter Burger

The Mix: For the best distribution of the butter into the patty, freeze the butter beforehand, then grate it using the small grating surface of a box grater.

The Patty: Dont overly work or compress the patty. Doing so will make the burger have a tougher bite than youll enjoy. Spend as little time manipulating the burger into a patty shape as necessary.

The Buns: Use a pastry brush to lightly coat the buns cut side, before toasting them in the pan or on the flat top over medium heat.

The Cup: Using your thumb, press a small indent into the center of each burger. This will prevent the burgers from cupping during the cooking process.

Cooking Burgers On The Stove

To cook hamburgers on the stove, choose a grill pan or cast-iron skillet as nonstick pans wont provide a crisp sear. You want the pan good and hot to get a good crust on your burger, so preheat your pan over medium-high until it just starts to smoke.

Then cook undisturbed for two to three minutes . Moving the burger will stop the browning process, so be patient! Flip and repeat the process on the other side until the internal temperature reaches your desired doneness .

Mixing And Forming Burger Patties

As for making the burgers, there are a few key things to keep in mind. First, you want to make sure to not over-mix the meat. You can mix the meat by hand or using a stand mixer on its lowest setting mix just until everything is combined. Over-mixing will create tough hamburgers.

Next, when forming the patties, be gentle again, you dont want to overwork the meat.

Finally, make a slight indentation in the center of each patty. This will help them cook evenly and prevent them from puffing up in the middle. If youre making them on the stove this is less necessary as you can press them with a burger press or spatula as you cook.

No! Please, dont make this common burger mistake. Pressing down on the patty with a spatula squeezes out all those tasty juices. Do You Need To Poke A Hole In Homemade Burger Patties

Usually in my house, youll find we poke a hole / indent in the top of the burger patty before setting it in the fridge to chill and form a patty for 15-30 minutes.

And sometimes, well add an extra sprinkle of salt and pepper to the outside before cooking as well.

When you push down a circle with your thumb in the center of the burger, it helps it from poofing up in the center and keeps it flat while grilling burgers on a hot grill.
