To make this homemade marinade and pork chops on the grill, simply do the following:
Step 1: Combine all the ingredients except the pork chops and parsley in a large ziptop bag.
Step 2: Add the pork chops to the bag, seal, and squish everything around to combine and coat evenly.
Step 3: Refrigerate for 1 hour.
Step 4: Preheat an outdoor gas grill to medium and when its hot, add the pork chops.

Getting Those Classic Diamond Crosshatch Grill Marks
Now lets grill some really pretty looking pork chops. Place the pork chops on the hot grill and leave them alone for 5-7 minutes, or until they naturally release from the grill with little effort. Then give them a quarter turn with tongs. This will give us those nice crosshatch grill marks. Let them grill for another 2-3 minutes. Then, flip the pork chops and grill an additional 2-3 minutes. All were looking for is a quick sear on the flip side. You want the internal temperature of the chops to be 145°.

Choose the right pork chop for grilling. While lean chops are good, too leanlike sirloin chopsare not great for grilling. Instead, choose center-cut rib chops and center-cut loin chops with a bit more fat for flavor and tenderness.
Fat or thin, both chops win. Thin pork chops are great for grilling because they cook quick with less time to dry out. Thicker pork chops can be just as tender and just as juicy as thin. Again, it comes down to the cut you choose. For a quick-cooking boneless pork chop, choose pork chops with a thin fat cap that are about 1 inch thick.

What are thin pork chops? Theyâre typically about 1/4-inch thick, boneless or bone-in. Pork labeled as cutlets are also known as thin pork chops â look for ones cut from the tenderloin which will be the least tough.
1. Marinate the Pork Chops
Season pork chops and marinate for 1 hour at room temperature.
2. Prepare a Grill for Medium Heat
Preheat a clean gas or charcoal grill for medium heat. You can also use a grill pan on the stove. If youre using a grill pan, cook the pork chops in batches, as there needs to be at least one inch between each chop so that the chops dont steam.
3. Drain and Season the Pork Chops
Drain the pork chops and season with salt and pepper.
4. Grill the Pork Chops on One Side for 4 Minutes
Brush the grill with oil. Place chops on grill grate and let them cook until they easily release without sticking, about 4 minutes.
5. Flip and Cook On the Second Side for 3 minutes
Its difficult to use a thermometer to take an internal temperature on a thin pork chop so you just need to trust the timing. If you do take a temperature, you want it to be 145 degrees F.
What Kind Of Pork Chops Should I Buy For Grilling
Bone in pork chops are the best for grilling. You want to purchase a pork chop that is at least 1-inch thick to use on the grill. If you dont see any out for purchase, you should ask at the meat counter and they can cut them for you. Ask for a 1 1/2 to 2 inch bone-in center cut rib chop or loin chop. Either of these will be a great option for the grill.

In this recipe I state to cook to 140 degrees and then tent for 5 to 10 minutes. The temperature of the pork will continue to rise to the safe temp once taken off the grill. If you wait to remove it at 145 degrees, itll most likely be tough by the time you take a bite.

If you dont want to use the marinade I suggest for grilled pork chops, you can definitely use store bought marinades. I like thinner marinades rather than the really viscous and thick ones for pork chops.
I like to marinate my pork chops for 1 hour in the refrigerator before grilling them. However, if all you have is 15 minutes, or less than a full hour thats fine. Something is better than nothing!
Once you place the chops on the grill, dont move them around, mess with them, peek at whats going on. Wait at least 5 minutes with the lid closed before checking on them. You want a nice sear and that wont happen if youre impatient and moving the meat around.
Since the thickness of all pork chops varies, as do all grills and how hot they get, keep an eye on the grilled pork chops. About 6 to 8 minutes per side is a good estimate, but youre in charge of knowing when they are actually done.
Pork is done when the internal temp reaches 145F. Check it with a digital thermometer if youre unsure because its essential the pork is cooked to temperature.
The internal temperature will continue to rise as your marinated pork chops rest after you take them off the grill. Its safe to pull them when theyre 140F, let them rest for 5 to 10 minutes, the temp will come up to 145F, and youre set.
