I am a big fan of a quick skillet dinner. Or any quick and easy dinner for that matter. Chicken is definitely one of our go-to proteins and we make chicken recipes at least twice a week.

This skillet Monterey Chicken definitely checks all the boxes and happens to be a family favorite as well. Its so simple to make.

After frying up the bacon, I brown the chicken quickly in the bacon grease. The stock is then added to the skillet and the chicken simmers for several minutes, just until cooked through. The result? Super juicy and flavorful chicken breasts that no one can resist!

How Long Do I Grill Chicken Thighs

Boneless skinless chicken thighs take about 10-20 minutes to grill at 400-450 degrees. Place chicken close to direct heat and grill for 6-8 minutes. Once grill marks have formed, flip and move to indirect heat and cook for another 5-10 minutes depending on how thick your thighs are, or until internal temperature reaches 165 degrees.

Placing a meat thermometer in the thickest part of the chicken can help to tell when the chicken is done. The time can vary depending on the size of your chicken and how hot your grill is. Bone-in thighs can take longer to grill.

How Long Should You Cook The Chicken On The Grill

It depends on the thickness of the chicken breast. If you prefer to use thinly sliced chicken breasts, they will cook quicker than thick chicken breasts. The rule of thumb is usually 3-5 minutes per side on medium to medium-high heat. The FDA says that chicken is fully-cooked at 165 degrees. Keep in mind that chicken continues to cook slightly once you remove from the grill.

How To Grill Marinated Chicken

Once your chicken has marinated for 12-18 hours, its time to grill it! We have a thorough guide on how to grill chicken here, but heres a quick refresher.

  • Remove Moisture: First things first, remove your chicken from the package and then use a paper towel to blot as much moisture out of it as you can.
  • Flavor: Next, use this grilled chicken marinade recipe to marinate your chicken for 12-18 hours.
  • Grill: Preheat your grill to around 400ºF. We know that grill temps fluctuate, so dont freak out if it isnt exact! Weve found that 400ºF is the perfect temp for grilled chicken. Hot enough to get you gorgeous grill marks, but not too hot to dry out your chicken. Grill your chicken for around 7-8 minutes over direct heat, flip, and grill for 8-10 more minutes. PS: this is for a 6 oz. chicken breast!
  • Internal Temp: You know your chicken is completely cooked once it reaches an internal temperature of 165ºF. We use a meat thermometer for this, that way you dont take any risks in eating raw chicken. You can learn more about cooking here from this great article by the USDA.
  • Let Rest: What is rest time? After you remove the chicken from the grill and it sits, it will continue to cook to the final temperature. We recommend letting your chicken rest for at least 5 minutes so that you can ensure it reaches at least 165ºF to destroy any bacteria.

    What Do I Need To Make Bbq Chicken Marinade

    • Chicken Breasts We recommend pounded these to an even thickness so they grill evenly. You could also mix it up and use drumsticks, thighs etc.
    • Dried Onion Flakes Finely diced fresh onion will work too.
    • Smoked Paprika Can use regular paprika, but the hint of smoked flavor is perfect for this recipe.
    • Salt and Pepper
    • Honey Any sweetener with will work.
    • Ketchup Pick your favorite brand.
    • Soy Sauce Could substitute with Liquid Aminos.

    • extra virgin olive oil this is the base of our marinade.
    • balsamic vinegar one of my favorite marinade ingredients, balsamic vinegar adds incredible depth to this marinade and goes so well with steak. Gives your steak a restaurant quality.
    • soy sauce I opt for low sodium otherwise I find the steak is too salty.
    • Worcestershire sauce adds savory, complex flavor.
    • pineapple juice this will help tenderize even the leanest cuts of steak.
    • brown sugar subtle sweetness and molasses flavor that isnt overwhelming. Honey is a good alternative.
    • Dijon mustard rounds out the flavors and pulls the marinade together.
    • ground black pepper for seasoning.
    • garlic powder fresh garlic will burn easily on a grill so I like to use garlic powder instead. Not enough to overpower the flavor of the steak, just enough to enhance it.

    How To Make Coleslaw Dressing

  • In a small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, pepper and celery seeds if using.
  • Next, pour the coleslaw dressing over the cabbage and toss it until well combined.
  • Refrigerate the coleslaw for a good 30 minutes before serving if you have time. Its delicious immediately but the flavors are best if it can chill for a bit. Enjoy!
  • How To Make Perfect Grilled Chicken

    Making flawless grilled chicken isnt complicated. Heres the step-by-step process:

  • Make Marinade: Add the garlic, fresh thyme, rosemary, dijon mustard, honey, tamari, balsamic vinegar, olive oil, salt and pepper to a small bowl. Whisk until emulsified, or until the oil and vinegar no longer look separate.
  • Soak Chicken: Add the chicken breasts to a large ziplock bag, then pour in the marinade. Close the bag, removing as much air as you can. Move the chicken breasts around in the bag to coat them. Allow the chicken to marinate for at least 30 minutes. For the best results, soak it for 4 hours or overnight .
  • Heat Grill: Preheat the grill to medium-high heat, approximately 350-400°F.
  • Cook Chicken: Remove your chicken breasts from the bag and discard the extra marinade. Place the chicken directly onto grill grates. Grill it for 4-6 minutes per side. If the chicken does not release from the grill, its not ready to be flipped wait another minute or two.
  • Let Rest: Remove your chicken from the grill when its internal temperature reaches 165°F. Let it rest for 5 minutes before you slice and serve it.

    Can I Freeze Chicken In Marinade

    YES! Honestly, thats the best part about this marinades! I made all 5 of these marinades in one day and froze 3 of them! Heres how you do it:

  • Add chicken to a freezer-safe storage bag and pour the marinade over the chicken. Remove all the air from the bag and seal. Using your hands move the chicken around to make sure they are all coated. Label the container with the contents and date.
  • Place storage bag in freezer, try to arrange the freezer so that the bag is as flat as possible. Freeze for up to 3 months.
  • To thaw: Remove bag from the freezer and thaw on a plate in the refrigerator overnight. After its thawed, remove the chicken from the marinade and discard the marinade.
  • I worked hard on all 5 of these recipes. They have been tested, re-tested and approved as the Best Chicken Marinades for Grilling around! I tried to make sure that I had enough variety and I think I did it!

    Step 1. Mix all the ingredients in a large bowl with a whisk. Reserve half of the marinade to baste on the chicken while cooking.

    Step 2. Place Chicken in a large bowl and pour the marinade over the chicken. Move it around and get all that great flavor covering the chicken. Let it marinate for 30 minutes or to overnight .

    If ya don’t like touching chicken grab those tongs to stir this all up!

    Step 3. Preheat that grill. Remove the chicken from the marinade and let excess drip off. Don’t want flames a ruining all this beautiful chicken. Grill chicken on each side for 5 to 10 minutes depending on the thickness of the chicken breast.Baste the chicken with remaining marinade while cooking. Cook through until no pink throughout.

    Step 4. Remove from the grill to a plate or platter and cover with foil. Let chicken rest for 5 minutes and then devour!!!

    TIP for MEAL PLANNING: Double the recipe and use the grilled chicken for salads, grilled chicken wraps, or pack to go containers with chicken and a protein that can be quickly heated for lunches for the week.

    How To Serve Marinade Chicken:

    My family loves when I grill a big batch of marinated chicken. We use it for so many different ways during the week.

    • Dice up the chicken and toss it on your salad to make a chicken salad.
    • Slice the chicken and make a Cesar Chicken Wrap.
    • Top it on a rice and veggies for a healthy lunch or dinner option.
    • Shred the chicken and add it to your favorite pasta salad.

    How Long Do You Marinade Chicken

    How long you marinade chicken really depends on what type of chicken you would like to marinate. Thin sliced chicken breasts will take much less time than thicker, whole chicken breasts. And bone in chicken will take even longer to marinate than boneless chicken.

    I like to marinate chicken at least 4-8 hours for boneless chicken breasts or thighs. Bone in chicken parts I like to leave in the marinade even longer.most of the time overnight. Its great for a weeknight dinner because most of the prep work is done!

    How Long Can Chicken Marinate For

    Most recipes tend to get better the longer you marinate, but this grilled chicken marinade is an exception. Ive tried all different kinds of marinating times and around 4-6 hours yields the best end product.

    Honestly though, even 30 minutes of marinating will give you deliciously flavored chicken! I dont recommend marinating for more than 6 hours because the acid begins to cook the chicken.

    The leftover Chicken Marinade is a one and done situation here..because raw chicken has been sitting in it for a period of time you must discard any of the marinade that came in contact with the chicken.

    If you made the marinade in advance as part of your meal prep, it can be stored in the refrigerator in an airtight container until youre ready to marinade the chicken.

    How To Check Temperature Accurately

    I highly recommend investing in a meat thermometer otherwise there is no accurate way to check when your chicken is cooked without slicing and loosing valuable juices.

    • Chicken breasts: insert the thermometer into the thickest part of the chicken although hopefully you dont have one because your chicken has been pounded to an even thickness ).
    • Chicken thighs: insert the thermometer into the thickest part of the chicken without hitting any bones. Bones are a heat conductor and will register higher than the actual meat.

    How To Grill Potatoes

    Golden brown goodness in a warm, poppable bite. You wont be able to get enough! Easy crispy potatoes on the grill are the perfect side dish for your next BBQ. Lets take a quick look at how easy they are to make:

  • Preheat your grill to medium high heat, between 350°F to 400°F. While the grill is heating up, bring a large pot of salted water to boil on the stove.
  • In the meantime, slice your potatoes into ¼ inch slices. Its important to get them as evenly sliced as possible so they cook evenly. Use a mandoline if you have one!
  • Add the potatoes to the boiling water and cook for about 5 to 6 minutes. Youll want them almost al dente but not fully cooked, since theyll finish cooking on the grill. We dont want overcooked potatoes that fall apart as soon as you touch them, of course!
  • Remove the potato slices from the boiling water and pat dry with a paper towel. Set aside until ready to season.
  • In a large bowl, whisk together the melted salted butter, lemon juice, salt, Italian seasoning, and paprika.
  • Add the potato slices to the bowl and toss gently until they are all fully coated.
  • Place your slices on a heated grill to cook for 3 minutes on each side or until they reach a beautiful golden brown. Use grill tongs to safely and easily flip the potatoes over.
  • Serve straight off the grill with minced parsley and a splash of lemon juice. Enjoy!
