What’s The Best Wood To Grill Chicken Wings
Since chicken wings are usually paired with strongly-flavored, spicy sauces, we recommend using strong-flavored woods like mesquite and hickory. But the ideal match is our Signature Blend of pellets. The strong-flavored blend is designed to match the powerful flavor of game meats, but stands up to chicken wing sauce, too.
How To Choose The Best Chicken Wings
Every meal you make is better if you use high-quality produce and that includes wings. Theyre not expensive, so seek out the best and they must be fresh, not frozen. Its almost impossible to crisp up frozen chicken wings, theres too much moisture locked inside. Head to the butcher if you can, but quality wings from your local supermarket will work just as well.
Split your fresh wings into drumettes, wingettes, and tips, and forget about the tips theres zero meat on a wingtip, although you could make stock or gravy with them. If you have the time, chill the prepared wings in your refrigerator for three hours or more, theyll dry out in the cool atmosphere and make crispy heaven achievable. Overnight wont hurt.

You can buy chicken wings already cut up or whole. If you buy them whole, the wings will consist of three parts: the drum, the flat/double-boned wing part, and the tip. To cut up a whole wing, start by cutting off the tip , then cut between the drum and the wing part. Try to cut the sections apart at the joints, where the cartilage is softer than solid bone. Its easy once you get the hang of it.

How Long Does It Take To Grill Chicken Wings
Whether you grill or smoke wings, cook them over direct high heat the grill temperature should be around 450 F for 25-30 minutes, or until an internal temperature of 165F is reached. Its no fail! This is the thermapen I recommend to ensure meats are always cooked to proper temperatures. Chicken must register 165F to be fully cooked and safe to eat.
As far as prep work, keep things simple. The best grilled chicken wings are tossed with olive oil , kosher salt, and black pepper, or simply mixed with a pre-made seasoning or dry rub . Ive cooked wings side-by-side for the sake of comparison. Both ways are great!
No need to complicate it further with lots of marinades or seasonings. Sometimes the best things in life are the simplest.
Leftover And Reheating Wings
Once the wings have been cooked, they will keep in the fridge for three or four days. The best way to reheat them is on a medium grill for 10 to 12 minutes, turning them halfway through.
They also can be reheated in a 350ºF oven for 10 to 15 minutes. The wings should be placed on a rack, similar to our baked chicken wing recipe, to keep the outside nice and crispy.
The Tequila Lime Dip will keep in the fridge for 3 to 4 days. Besides chicken wings, its also great with fresh vegetables and as a topping for tacos.

The Best Bbq Wings Of My Life
Now I’ve eaten thousands of Buffalo wings before and since, but none were like Big Barry’s. I swear they had to be either roasted or grilled because Barry’s wings were crisp and charred and very much not like those nasty, pallid fried things you get in most of the country.
Amazing what a slight difference in a cooking method can do for a humble dish.
I loved these BBQ wings. Loved them. So much so that one day, after an unusually tough workout , I decided to pick up the gauntlet that Barry’s threw down at every customer who walked in the door: Eat enough wings to get your name on the Plaque of Honor and your whole table eats free. No problemo, I thought.
Tips For Better Grilled Wings
- Avoid using sugar or brown sugar in the marinade or dry rub for the wings. The addition of sugar makes it more likely that the direct heat from the grill will burn the wings.
- If the skin isnt as crispy as youd like, turn one burner up to high and place the wings skin side down over the top of it. To keep the wings from burning, they should be checked every 30 seconds or so and taken off the heat as soon as the skin has reached its desired level of crispiness.
- The wings can be served as soon as they come off the grill and do not need to be rested.

No other cooking method — from deep frying to cooking on charcoal or gas — can compete with the natural smoke flavor that comes from grilling wings on a pellet grill. The kiss of smoke adds new layers of texture and flavor to your wings. One of the best parts of using a pellet grill is the smoke and heat are well-circulated so you dont have to worry about where you place the wings or continually flipping them.
