1. In a small bowl combine the rub ingredients. Pat the wings dry, and then place them in one layer on a sheet pan. Sprinkle with the rub, working it in on both sides with your fingers. Refrigerate the wings, uncovered, to air dry for about 4 hours.

2. In a small saucepan over medium heat, combine the sauce ingredients. Stir until the butter melts, and then remove from the heat.

Cook Time/how Long Do You Grill The Wings

How do you know when the wings are done? Wings can take anywhere from 15-20 minutes to grill. I like to flip them every 5 minutes to ensure they crisp up nicely. The wings should brown on both sides when finished cooking.

According to the USDA, chicken should be cooked to a safe minimum internal temperature to destroy harmful bacteria that may be present. Use a food thermometer to be sure they have reached a safe minimum internal temperature of 165 °F.

When testing with a meat thermometer, insert it into the thickest area of the chicken wing.

This is the thermapen I recommend to ensure meats are always cooked to proper temperatures. Chicken must register 165F to be fully cooked and safe to eat.

As far as prep work, keep things simple. The best grilled chicken wings are tossed with olive oil , kosher salt, and black pepper, or simply mixed with a pre-made seasoning or dry rub . Ive cooked wings side-by-side for the sake of comparison. Both ways are great!

Now I’ve eaten thousands of Buffalo wings before and since, but none were like Big Barry’s. I swear they had to be either roasted or grilled because Barry’s wings were crisp and charred and very much not like those nasty, pallid fried things you get in most of the country.
