  • The Salt: Kosher salt differs from table salt, dont use table salt. Further, different brands of kosher salt differ from one another. Mortons kosher salt, for example, easily doubles the saltiness in taste as compared to Diamond Crystal Kosher salt. Plan accordingly.
  • Know your steaks temperature: Grilling the perfect steak with consistency is impossible without using a reliable meat thermometer. Trust me, this is the one tool I talk about most, and its a must-have for anyone who cooks.
  • Steak Positioning: When searing a ribeye, try to keep the spinalis as far away from the direct heat as possible. Of course you want it to char nicely, and build flavor, but keep it on the periphery of the hot section of your grill so as not to overcook it.
  • Be Patient: Youll be flipping the steak often, every 20-30 seconds. After the first handful of flips it might not look like youre getting any char at all. You will, it just takes time. Flipping often like this will prevent overcooking the outside and undercooking inside.
  • Make use of the hot grill: Dont forget the sides when planning this steak. Plan for some that cook quickly while your steak is resting, and that benefit from high direct heat like this grilled broccolini or grilled baby bok choy.

  • Salt steak on all sides. Then, leave at room temperature for 45 minutes.
  • Preheat the oven to 400 degrees and a cast-iron skillet over medium-high heat with one tablespoon of olive oil.
  • Season steak with more salt, if desired, and black pepper.
  • Sear the steak for 1-2 minutes on one side flip with tongs and sear for 1-2 minutes on the other side.
  • Place the skillet in the oven and cook for another 5-8 minutes until a digital meat thermometer reaches the right temperature for your desired doneness .
  • Rest steaks on a plate tented with foil at room temperature for 5-10 minutes.

Tips And Tricks For Grilling Steak

Take the time to remove the steak from the refrigerator about 30 minutes before you are going to grill it. This will bring it to room temperature. The benefit of this is that it will cook more evenly.

We used our beef seasoning which we think is amazing, but your favorite steak seasoning is the perfect option also. Even a sprinkle of coarse salt and ground black pepper will make it mouth-watering.

A ribeye is one of the most tender cuts of steaks you can buy. Instead of making it tender, you’re trying to keep it tender. You do that by cooking it properly to medium rare, or 135 degrees Fahrenheit.

Overcooking a ribeye will dry out the meat, making it less tender. Ribeye steak cooked to 145 or above will look gray, not pink. At higher temperatures the meat will be tough to the touch and to the teeth. We strongly recommend using an instant-read meat thermometer to check the temperature as you cook. There’s no better way to ensure you cook ribeye to maximum tenderness.

Once your ribeye is cooked, cutting the steak across the grain will break down muscle fibers and result in a more tender bite.

How to Grill a Ribeye Steak on a Gas Grill

The amount of time it takes to cook a ribeye steak depends on the thickness of the steak, and the temperature at which youre cooking it. Regardless of your method, you should cook your ribeye steak to an internal temperature of 132 degrees Fahrenheit to get that perfect medium-rare. When smoking and reverse searing, that could take about 50 minutes since its cooking at a lower temperature. If youre searing a ribeye in a very hot pan, it could take as little as 5 minutes to get to that perfect 132 degrees.

How To Make Grilled Ribeye Steaks

STEP ONE: Start by marinating the steaks in advance. Place the ribeyes in a zip lock bag or container with the Steak Marinade. Allow them to marinate in the fridge for at least 12 hours. For thicker steaks, allow them to marinate for up to 24 hours.

STEP TWO: Remove the steaks from the fridge about 30-60 minutes prior to cooking them to let them come to room temperature. Brush the grill lightly with oil and allow it to preheat for 10-15 minutes until the oil starts to smoke. Shake off excess marinade and place the steaks on the grill over direct heat. Cook the steaks for 1 1/2 to 2 minutes and then flip them over and cook for another 1 1/2 to 2 minutes on the opposite side.

STEP THREE: Move the Grilled Ribeye Steaks to a place of indirect heat on the grill and let them come to the desired doneness. For reference, medium-rare is about 135 degrees F. Once removed, allow the steaks to rest for 5-10 minutes before cutting to allow the juices time to settle.

Its popularity made me realize theres a real need to understand the nuances of grilling different cuts of beef, and explaining how to grill ribeye steak. Here, Ill discuss not only how to grill ribeye, but also dive into how to pick a ribeye, and how to season a ribeye.

The strip steak, as I explained in that blog, is probably the easiest steak to grill. To grill the perfect ribeye however, is slightly more challenging.

Why? For a few reasons. First, the ribeye steak is made up of more than one muscle. Each muscle is marbled with various amounts of fat, and cook at slightly different paces.

Second, ribeye is often offered as bone in ribeye, or rib steak. While the bone does offer some advantages, the meat closest to the bone cooks much slower than other parts of the meat. So, by the time that meat is medium, the rest of the steak might be closer to medium well.

Finally, unlike the strip steak that is usually cut to about 1 ¼ thick, youll find the ribeye ranges from one to 2 ½ thick. For anything over about 1 ½ thick I recommend the reverse sear method. For this blog Ill be using the constant flip method because the steaks used are just under the 1 ½ thickness.

  • Trim excess fat from your ribeye, if needed. The fat will drip down into the fire, feeding the flames, which can burn your steak.
  • Firmly press the steak seasoning into your ribeye. This gives the steak a delicious crust on the grill!
  • The USDA recommends steak be at least 145°F internally to be considered ‘safe’ to consume. However, some people prefer their steak less done. Use a meat thermometerto find out the internal temperature of your steak.
  • Rare: 125°F-120°F
  • Medium-rare: 130°F-135°F
  • Medium: 135°F-145°F
  • Medium well: 145°F-155°F
  • Well-done: 155+°F
  • Keep in mind that your steak will cook an additional 5°F after being removed from the grill, this is called ‘carryover cooking’. For this reason, you should aim for your steak to be 5°F shy of your ideal internal temperature.
  • When seasoning ribeye steaks, always wait to add the seasoning until just before cooking . The salt in the seasoning will pull the moisture out of your steak. If 3 minutes have passed, you should wait a minimum of 40 minutes to cook your steak .

    Time And Final Temperature

    A rough estimate to get to a 140° internal temperature with a 450° grill will be 10 to 14 minutes. But this is highly variable due to the exact grill temperature, the thickness, and initial temperature of the steak, and your desired final internal temperature.

    So, when is it done for you? There is a lot of snobbiness about this. The “rare” people will unfriend you on facebook if you disagree. Most of the pink will disappear at about 155°.

    You like what you like. But if you haven’t tried your steak a little rarer, I suggest trying to “work your way down” on good filet or ribeye. Don’t jump from well done to rare. Go down by five degrees at a time.

    I like 140°-145° now after growing up in a “burn it to black” family. I doubt I will go lower. I like “hot” steak, and below 140°, the steak is only warm to me. Remember you can always toss it back on the grill for a few minutes.

    The rest period after removing the steak from the grill, which is needed for the meat to reabsorb some moisture back into the cells, will increase the temperature 2-5 degrees.
