This recipe is the main building block and grilling guide I use as the base for nearly all of my grilled chicken recipes. The secret to juicy grilled chicken isnt in the seasonings or complicated marinades, its all about HOW you grill the chicken.
Set up the grill with two heat zones. If using a gas or a charcoal grill, designate one side of the grill for direct grilling and the other side for indirect grilling .
Sear the chicken on both sides over the direct heat, then turn off one burner and move the chicken to the side of the grill where the heat has been turned off to finish baking over the indirect heat. The chicken continues to cook over the indirect heat but wont burn. I usually close the lid and cover, but check the temperature and monitor how the chicken is cooking, opening the lid if the grill is too hot.

How Many Grilled Chicken Wings Can You Eat
Because Barrys wings were barbecued , and they could be ordered with sauce on the side, I had routinely eaten dozens at a sitting. I started with 25 wings, which went down easy. Another few Pabst Blue Ribbons and I was on to my second 25. Again, easy-peasy.

After combining the spices, when ready to grill, simply stir in a bit of olive oil, then literally and liberally rub the mixture all over your boneless, skinless chicken breasts. If using skin-on chicken breasts, thighs, or wings, use your fingertips to work the mixture in under the skin for maximum flavor.
Now simply grill the chicken over medium-high heat until the middle is no longer pink. Assuming youre using semi-fresh herbs and not ones that have already been in your pantry for five years, then youve got about two to three years to use your newly made spice rub.

Keep in mind that this really is just a basic guideline and you can sub in your favorites, but I have been loving this mix just as is!
- Dried Thyme I usually use dried, but you can use fresh if you have it. If using fresh, youll want to use 3 tablespoons instead of 1.
- Dried Oregano The same as the thyme above if subbing in fresh, use 3 tablespoons. I would roughly chop it, as well.
- Ground Cumin This brings a smoky flavor that is a must for me!
- Paprika I have been a smoked paprika addict lately, so I will sometimes use smoked paprika instead of plain paprika. But both are delicious!
- Onion Powder This gives a lot of flavor.
- Salt I use kosher salt not table salt.
- Pepper I like freshly ground pepper, but regular pepper will work here, especially if you arent using all of the seasoning and saving some for later.

- Chicken: cooked grilled chicken makes fantastic meal prep or leftovers if not initially overcooked. If you are making the chicken specifically to reheat later then consider slightly under-cooking it because it will cook a little more when reheated.
Grill And Chicken Temperature
Grill the chicken on medium heat. I have a gas grill with Grill Grates so it is easy to check the temperature with a laser thermometer. I grilled these at 450°.
If you use a charcoal grill, let the coals burn down a bit so they are not super hot. If you do a lot of grilling, you know how to use your charcoal grill.
At 450°, I grilled each side for 4 minutes. The internal temperature was 150° when I removed them from the grill. Put the breasts on a plate and cover with aluminum foil for 5 to 10 minutes. They will continue to cook a bit and retain their juices.
The U.S. FDA, , recommends that chicken be cooked to 165°. Thats a good temperature for legs and thighs, but Ive always been a rebel when it comes to white meat. The chicken will be a bit more tender and juicy at 150°. Use your own discretion about the temperature.
Serve the chicken with a big spoonful of the salsa on top and then drizzle with some Good balsamic vinegar. Aged balsamic is the best, but some 50 year old vinegar is $20.00 an ounce. I have pretty good balsamic that was $20.00 for 8 ounces. Use what you can afford.

How Long To Brine Chicken Breasts
All it takes is 30 minutes in a simple brine solution of 1/4 cup kosher salt dissolved in 4 cups water. This is all the time you need for the chicken breasts to absorb enough moisture so they can better hold up to the heat of the grill without drying out.
With a half an hour of brining, the salt that is absorbed isn’t so much that the chicken becomes salty, but it is enough so that the flavor of the grilled chicken will be enhanced. We would normally salt grilled chicken breasts, right? You don’t need to do that if you brine.

Grilling The Chicken Wings
To grill the chicken wings, we typically have the grill somewhere around 425-450F. At this temperature, the wings should take about 30-40 minutes to complete cooking. The grilled chicken wings will need to be flipped a time or two while cooking to make sure both sides of the wings get crispy. As always, use a food thermometer to monitor temperatures as the wings are cooking to ensure the perfect doneness. For wings, taking them up to 180F or so like chicken thighs is ideal.
Do I Need To Oil My Chicken Before Applying Spices
That will depend heavily upon the recipe you are using and the cooking method. In general, if you are going to grill the chicken, then yes, you will need to apply a high smoke point oil such as vegetable oil.
This keeps the chicken from sticking to the grill and enhances the flavor slightly. However, if you are going to be baking your chicken, then NO you will not need to add oil to the chicken unless your specific recipe calls for it. Chicken releases a lot of juices in the oven and generally, oil is not needed.

Cook time depends on the thickness and if its whole or sliced into culets. It will take about 5 to 8 minutes per side for thicker pieces and between 3 to 5 minutes for thinner ones.
