Both drumsticks and thighs are fine. This recipe works with all parts of the leg because we cook to an internal temperature, not a specific time.
I decided to cook whole legs drumstick with thigh attached because theyre a heartier portion. These are sometimes referred to as chicken quarters.

One is that the recipe had brown sugar and it made it almost impossible to properly brown the skin without some burning here and there. Not a huge problem but Id rather avoid it if I could. The other one is aesthetics and visual appeal. Somehow plain dry rub without any oil does not look so appetizing on grilled chicken legs. Here is the picture of the product of the old recipe, see the difference? So, in a nutshell, brown sugar is out and is substituted by dark soy sauce for some sweetness and color. Olive oil is in for better browning and visual appeal.
What Is Two Zone Grilling

The key to this chicken thighs recipe is two zone grilling . To achieve this, you’ll need a gas grill that has multiple cooking areas / zones. Once you preheat your grill, you’ll turn off one set of burners to create an indirect cooking zone. This is where you’ll place your chicken thighs or any food that you want to grill indirectly. The other side of the grill will remain on, creating a direct heat zone.
You can create a similar effect on a charcoal grill by positioning the hot coals on one side and leaving the other side empty.

Uneven Grillingthe Secret To Grilled Thighs
Uneven grilling is my method to avoid both flare-ups from draining fat and burnt skin.
There are two parts to this method:1) The skin side of the thighs can burn easily so should have less time facing the flames. So with skin-on thighs, start with skin up for the first period and grill for about 5-6 minutes. Flip to skin side down for 4 minutes. Continue to go back and forth using the same timing.2) Alternate sides of the grill surface with each flip. You will get fat drainage flare-ups. Moving the chicken to the other side of the grill at the flips will allow hot spots from fat drainage to burn out.
For skinless thighs, you can skip the uneven grilling timesyou have no chicken skin you are trying to protect. But you will still need a large surface area to move around and avoid flare-ups from the fat drainage.

Important Things To Know When Grilling Chicken Thighs
There are a few important things to know when youre grilling chicken thighs that are bone-in and skin-on that are really important, no matter what grill youre using.
I call these the holy grail of grilled chicken thighs:
A marinade is important
While chicken thighs are much more flavorful than chicken breasts, they can get boring. So, a good marinade is important. It doesnt have to be anything fancy or complicated. Cook them skin side down first, for at least 15 minutes
When Im putting my thighs on the grill, I cook them skin side down first and for longer than I cook the other side. Theres nothing like crispy skin with a kiss of smoke and char.
Dont over cook them
I use a digital read thermometer to make sure Im cooking meat perfectly. For these Traeger grilled chicken thighs, theyre done when the middle of the thickest part of the chicken next to the bone reaches 165F. Once you hit that, immediately remove them from the grill.
Let them rest before serving
Once the chicken is cooked, let it rest before serving for about 10 minutes. This helps the juices to draw back into the meat, giving you more flavor and moisture!
