Preheat gas grill before cooking to medium-high heat, or 350-400° F. Lightly grease grill surface and add chicken. Close lid and cook 8 minutes, or until bottoms are browned with sear marks. Rotate chicken, close lid, reduce heat to medium, and cook 7-10 minutes more, or until internal temperature reaches 165° F.

- Start with a wide, deep pan and add oil. Were going to cook the chicken over medium-high heat, and we want to have plenty of room for the two breasts. Using something wide and deep that accommodates the chicken and keeps splatter to a minimum.

How To Season Grilled Chicken Breasts
In this recipe I am using a simple combinations of garlic powder, oregano, basil, salt and pepper. This is my go-to seasoning for chicken breasts because it is simple, versatile and delicious!
I usually dont measure when I make grilled chicken breasts. But, no worries friends! I did measure for the sake of writing out this recipe for you guys. That being said, feel free to make it your own!
For examples of variations, I love to use fresh herbs and fresh garlic. Or Ill change it up and add some cumin to give it a Tex Mex flare.
I change up the herbs sometimes too! Rosemary and thyme are a great combination as well. And I have tons of both growing in my backyard.
But honestly most days I just need something quick. So I made this with dried herbs to keep things simple and easy.
Also, salt and pepper to your taste, but I do so pretty liberally. Chicken breast is pretty much a blank slate , so I salt and pepper generously.
How To Grill Chicken On The Stove
I use a square Lodge cast iron skillet to sear this chicken on the stove. You can pick one up at Walmart or Target for around $20.00. The pan creates the look of BBQ grill lines, and in a hot pan, the chicken will sear and retain its juices. If you don’t have a grill pan, you can use a round 12″ cast iron skillet or a heavy-bottomed stainless steel frying pan.
Turn on your exhaust fan because it might get a little smoky in the kitchen. Spray the pan with cooking oil spray or lightly brush with oil. Heat pan over medium-high heat for five minutes to get it hot and prevent sticking. Remove the chicken from the marinade and lightly shake off excess oil.
Place the chicken on the hot pan and cook for four minutes without moving the pieces. Flip the chicken and cook another four to five minutes until juices run clear when pierced with a fork. The internal temperature will be 165 degrees Fahrenheit on an instant-read thermometer when cooked through.
Remove cooked chicken to a plate. Let the chicken rest for a few minutes to allow the juices to accumulate and flavors to combine. Slice against the grain into 1-inch strips and serve.
