Making Beef Ribs On A Pellet Grill
Step 1: Start your pellet grill and set temperature for 250 °F. I like to use oak or hickory pellets for beef short ribs but use your favorite.
Step 2: While the grill is preheating, trim off any excess fat on the beef short ribs. There usually isnt much, but if there is, just clean it up with a sharp boning knife so they look like this:
Step 3: Whisk together all ingredients for the rub in a bowl. Generously coat the beef short ribs with the rub, ensuring you coat the sides. Dont worry about getting the bone side of the ribs. Youre not eating that side where the membrane is, so seasoning it is a waste.
TIP: Unlike pork ribs where the membrane should be removed, on beef short ribs leave the membrane in place to hold them together while youre smoking the ribs.
Step 4: Place ribs on a wire cooling rack inside of a cookie sheet. This allows for easy cleanup and prevents your grill from getting filthy with the dripping rendered fat. Place the ribs on the smoker, and close the lid.
Step 5: Mix beef broth, hot sauce, and soy sauce and pour into a spritz bottle. After the ribs have been on the smoker for one hour, give them a light misting of the liquid. This moisture helps the ribs take on some smoke and builds an incredible bark. Repeat every hour for the first four hours.
Step 8: Remove beef short ribs from grill, cover with aluminum foil and wrap in an old towel. Let ribs rest for at least an hour, but preferably 90 minutes, before opening up and slicing.
How To Cook Ribs On A Charcoal Smoker
Replacing the ribs on the smoker and continuing to cook until they reach an internal temperature of around 205 degrees F is recommended. You should pierce the ribs with a toothpick or probe at this time to see whether they are tender. The probe should be able to penetrate the meat with little to no resistance, almost like butter.

Well, check for DONENESS by inserting my toothpicks inside the membranes of two bones. If the membrane separating the two bone ends is cold, this indicates that the rib is done. Otherwise, if the muscle fibers are warm, which indicates the joint is ready to be pulled apart, we can assume the whole rib will be removed. This is called pulling. Also, taking an Internal Temperature reading is a great way to determine if there is any meat left in our rib. You can also use a thermometer to test for temperature. How Long To Grill Baby Back Ribs
Baby back ribs are cut from the loin section of a pig, and come from the part of the rib cage that connects to the backbone of the pig. If youre lucky, your butcher might have even left an inch or so of tender loin meat on the top side of your rib rack.
Baby backs typically come in slabs of 11 to 13 ribs and are incredibly tender and not quite as meaty as some other cuts. Because of this, they dont need to spend as much time on the grill or smoker to break down connective tissues and reach optimal tenderness.
The Slow Way :
If youve got time on your side, set your grills temperature to 225°F and cook your ribs for about 4 to 5 hours, depending on the size of your slab.
The Fast Way:
If youre looking to get baby back ribs done in a hurry, set your grill to 325°F and place your ribs on the indirect side and cook for about 1 1/4 to 1 1/2 hours. By then, the meaty section should have shrunk back from the bone a tiny bit and the meat should have a nice tenderness to it.
