What Marinade Should I Use For Boneless Skinless Chicken Thighs
The marinade ingredients are super versatile and can be used to pair with tons of flavors. Its made up of olive oil, lemon juice, honey, paprika, garlic powder, salt, and pepper.
To make the marinade, youll want to add everything to a sealable gallon bag or marinade Tupperware that has a lid, then mix together until its combined.
Once thats combined, add in the chicken thighs and seal then put in your refrigerator for at least 30 minutes, or up to 12 hours. Leaving it overnight can work as well, but the lemon juice may start to break down the chicken.
Be sure to flip the bag or Tupperware at least once to make sure both sides get a chance to be covered in the marinade.

How To Grill Chicken Thighs: Skin
Grilling is all about balancing the perfect texture and crunch with the tender meat. For addictive, crispy skin, start grilling the thighs skin-side down first for 3-5 minutes. Then, flip them over so they can cook evenly without burning or overcooking. The skin crisps up nicely when grilled first, but youll find that if its on for too long, it will become overly crispy and tough to eat.

How To Grill Chicken Thighs: Style And Seasoning
Part of what makes chicken such a popular grilling choice is its versatility. Used in almost every nation, chicken can be marinated, rubbed, basted, brined, or lightly seasoned in various combinations and traditions. A comparatively lean protein to beef and pork, chicken thighs have the perfect fat content for a moist texture that takes on all the seasonings characteristics.
One tip is to pat the chicken with paper towels once removed from the marinade. Marinades often have a lot of sugar content like brown sugar that can easily char and burn too quickly. A favorite option is to use a rub of spices before grilling, and then add your favorite barbecue sauce at the end for a little gorgeous color and caramelization.
How Do You Know When The Chicken Is Done

The best, most accurate way to know when the grilled chicken thighs are done is to use an instant-read thermometer to check the internal temperature. The USDA maintains that all poultry should reach a minimum internal temperature of 165°F for safe eating, but chicken thighs are actually tastier at a higher temperatureanywhere from 175 to 195°F. According to the pro chefs at Americas Test Kitchen, this gives the extra collagen and fat a chance to melt and render, yielding juicier, more tender results.

Cook them skin side down first, for at least 15 minutes
When Im putting my thighs on the grill, I cook them skin side down first and for longer than I cook the other side. Theres nothing like crispy skin with a kiss of smoke and char.
Dont over cook them
I use a digital read thermometer to make sure Im cooking meat perfectly. For these Traeger grilled chicken thighs, theyre done when the middle of the thickest part of the chicken next to the bone reaches 165F. Once you hit that, immediately remove them from the grill.
Let them rest before serving
Once the chicken is cooked, let it rest before serving for about 10 minutes. This helps the juices to draw back into the meat, giving you more flavor and moisture!

Boneless Or Skinless Thighs
While this recipe is for bone-in skin-on thighs, the meat is all the same and will cook with a few minor adjustments.
The bone will absorb some of the heat, so boneless thighs will cook a few minutes faster, and they always seem thinner to me. Thickness is a significant variable in cooking time, so pay attention to the internal temperature.
Skinless thighs should have a brush of oil before seasoning and do not need the uneven part of the grilling methodno skin to protect. But still alternate sides of the grill due to fat drainage and flair-ups.
