Smoked BBQ ribs.. Doesnt that sound like every mans dream food? I have to say I am blessed that my old lady loves to find meat on markdown, and when she found packages of ribs 50% off, she grabbed them all! We had friends coming over for dinner, so we whipped up these ribs, and they were a hit with everyone even the kids were into them!

You may remember from my Coca-Cola Smoked BBQ Wings that I like to make a brine well, this one for ribs added a lot of great flavor. I do have to say if you dont have a smoker at your house, you are really missing out!! We use ours to do everything to smoke cheese, vegetables, meat, almost anything you can think of!! Now my personal favorite smoking flavor is apple, the fruit smoke just adds an amazing flavor.

    Coming from a long line of Texans, and having lived here my whole life, I like to think I know a thing or two about barbecue. I grew up on baby back ribs and brisket cooked all day long on a smoker during my childhood weekends spent at our family lake house.

    Combine the chicken stock and vinegar in a roasting pan. Add the ribs, cover the pan with aluminum foil, and bake for 2 hours. Remove the ribs from the pan and put them on a plate. Transfer the leftover stock to a small saucepan on the stove. Turn up the heat to high and let it boil on high heat until it is reduced by half. Stir in the BBQ sauce and set aside.

    In a large container, mix together all the brine ingredients except the ice, and give it a good stir with a whisk or a big spoon.

    When learning how to grill ribs, it may seem intimidating because they require more time over the coals than many other types of meat. Heres the truth: Because they cook low and slow, they actually have a wider window of perfection than something like, say, a T-bone steak that relies on a savvy sense of timing and temperature. If you take some time to prep ribs correctly and learn where to cook on the grill, theyre easy enough even for beginners.

    How To Braise Ribs

    Braising ribs is similar to boiling ribs except you are using a smaller quantity of more flavorful liquid. This is a preferred way to infuse your ribs with more flavor because the liquid in which they cook is usually a lot more concentrated than the liquid you use to boil ribs. Again, the skys the limit as far as what you can add to your braise for flavor, but many people simply slow-cook their ribs in barbecue sauce.

    You can braise your ribs on the stovetop by bringing the barbecue sauce to a simmer over medium heat, adding the ribs, covering them, reducing the heat to low and cooking for a few hours. Check every hour or so for tenderness. This is an excellent opportunity to use a slow cooker, too.

    • 1 rack of St. Louis pork ribs- You can also use baby back ribs if you prefer them. They will cook even faster so they are ideal if youre really in a time crunch!
    • 2 tablespoons rib rub- Grab your favorite rib rub!
    • 1 cup apple cider- Brand and variety doesnt matter since it all gets the job done
    • ¼ cup dark brown sugar- Make sure to grab dark brown sugar for that sweet molasses! You wont get the same effect with light brown sugar
    • 2 tablespoons salted butter
    • 1 cup BBQ sauce- Again, grab your favorite BBQ sauce here. Something sweet and smokey usually does the trick!

    The final cooking method is to simply tenderize your ribs over the grates of your grill by cooking them for several hours over indirect heat. Heres how.

  • Preheat a grill to medium high and prepare for indirect grilling: For a gas grill, turn off one or two of the center burners and reduce the remaining burners to medium low. On a charcoal grill, bank the coals to the sides, leaving the center open set up a drip pan to avoid flare-ups.
  • Oil the grill grates.
  • Place the ribs bone-side down, on the cooler part of the grill .

    How To Make Ribs on a Charcoal Grill Easy

    Grilling beef ribs in the oven follows the same process as grilling on open flames or a gas grill.

    With the oven, you will need to preheat it to around 225°F before placing your beef ribs inside.

    Put the meat on the middle rack and allow it to cook for 1½-2 hours, turning a couple of times in between.

    You can cover it with foil to ensure it doesnt dry out and remove the foil in the last 20-30 minutes to brown.

    Another way to give that glazed, seared, and charred effect is by turning the oven to the broiler setting, which comes closest to grilling.

    How To Cook Ribs On The Grill

    So youre ready to take the dive into the world of cooking ribs on the grill? I promise its easy and youll be obsessed with the finished product. Youll need about 15 minutes of prep time and an hour of cooking time. So, make sure you account for that when planning out your meal!

    Youll want your grill preheating to low heat for about 15 minutes before youre ready to throw the ribs on. I use a propane grill, so 15 minutes is all I need. If youre using a charcoal grill, youll need more time for it to preheat, so plan accordingly.

    You also dont want to put ribs on the grill that just came out of the fridge, or else the meat might get shocked. So, while your grill is heating up, let the ribs rest on the counter for about 15 minutes.

  • Youre going to start by mixing up your dry rub. Combine all the dry rub ingredients in a bowl and give them a good stir.
  • When your ribs have warmed up a bit on the counter, remove the ribs from the package. To remove the membrane, turn the ribs bone-side up and pull up a little section of the membrane at one end of the rack. Then continue to pull up until the whole thing comes off. Then discard the membrane before moving on to the second rack of ribs.
  • Once the ribs are all coated and the grill is heated up, place the ribs on the grill with the meat side down.
  • Leave the ribs to cook bone-side down for 10 to 15 minutes.
  • Once cooked, take the ribs off the grill and cover them loosely with aluminum foil. Let them rest for 10 to 15 minutes.
  • When To Add Sauce

    Dont be tempted to add sauce until after the wrapping stage. If you put it on too early, the sugars in the sauce will burn, and all your efforts will be rewarded with a bitter, acrid flavor.

    After unwrapping the ribs, carefully brush the entire rack with the sauce of your choice. Decrease the heat to about 250 degrees Fahrenheit and return the ribs to the grill. Cook for about 15-20 minutes, or until the sauce has set.

    Once the ribs are finished cooking, allow the meat to rest for 10-15 minutes before serving. If youd like, you can offer additional sauce on the side for dipping.

    Preparing The Charcoal Grill

    Now it’s time to turn your charcoal grill into a smoker. This is easily done with two disposable aluminum pans. They should be about half the size of your charcoal grill. One of these pans will act as a drip pan that helps hold the charcoal in place and keeps drippings away from the fire. The other pan will be filled with water to add moisture to your grill and to help regulate the temperature.

    Start with a clean charcoal grill. Remove the cooking grate and start the charcoal. We’re using a charcoal chimney which will light the perfect amount of charcoal. You will need enough charcoal to cover half the coal grate with three layers of charcoal.

    Once the charcoal is lit, place one of the aluminum pans on the coal grate and pour the charcoal on the other side. You might need to bend the pan a little to fit it properly.

    Now, it’s time to add the wood. The wood is important for creating the smoke. We suggest large wood chunks since it will take longer to burn and provide smoke as you need it. Use several chunks for a good smoke supply.

    Return the cooking grate and place the second aluminum pan on it, directly over the charcoal. Fill with as much water as it can hold. The goal is to keep the grill at a consistent and low temperature . The water will steam away slowly and you shouldn’t need to add more water, but keep an eye on it.

    Now you have converted your grill into a smoker.
