Carving a gorgeous prime rib requires a little bit of science and a little bit of art. Some things to consider:

  • Try to carve the meat against the grain. This will break up some of the muscle fibers and make the meat more tender in the mouth.
  • We recommend slices that are 1/2-inch thick — but you can always slice to your own preferences and those of your guests
  • If your roast is bone-in, stand the rib upright, and follow the curvature of the bones as closely as you can until you cut through the base. Then slice the remaining pieces to your desired thickness.

How Long Do You Smoke Prime Rib Per Pound

A good general guideline for smoking prime rib is 15 minutes per pound.

However, we’d advise against trying to figure out a precise prime rib cooking time. You’re just setting yourself up for disappointment. There simply is no way to tell with such a large cut of meat — every time you cook, it will be different. The exact timing will depend on the specific cut of meat, the outdoor temperature and humidity, and even which way the wind is blowing.

Expert pitmasters recommend that you cook to temperature and forget about time.

Time And Final Temperature

To get a 140° internal temperature with a 450° grill, let 10 to 14 minutes. However, because of the precise grill temperature, the thickness and beginning temperature of the steak, and your desired ultimate internal temperature, this is very changeable.

A dry brine for a thin pork chop might only take an hour but because prime rib is such a thick cut of meat, the salt needs time to work its way from the surface of the cut to the center. If you choose to do a dry brine, salt the meat at least 48 hours before you plan to cook, and leave it in your refrigerator until an hour before cooking.

How To Cook Prime Rib On The Grill

  • Allow your prime rib roast to come to room temperature this should take a little under 2 hours. When ready, preheat your grill to 275-300 degrees Fahrenheit.
  • Rub every inch of your prime rib roast with spicy brown mustard.
  • In a small mixing bowl, combine ground coffee, paprika, granulated garlic, minced onion, brown sugar, black pepper, and salt. Whisk well.
  • Add the coffee rub to the rib roast and cover it completely. Let it sit for 20 minutes to soak up the rub.
  • Once grill is preheated, place prime rib on the grill and cook for 2 hours and 45 minutes, or until the internal temperature reaches 130 degrees Fahrenheit on a meat thermometer.
  • Allow the roast to rest for 15-20 minutes, then slice, serve, and enjoy!

    Lets dive into more specifics for grilling a prime rib on the rotisserie, shall we? When you head to the store or butcher to purchase your roast, make sure to buy it bone-in . Also, ask your butcher to tie the roast tightly prior to taking it home. This is save you a step, and ensure the roast is a consistent size to help it evenly cook on the grill.

    For todays recipe, Im cooking a 6-pound prime rib roast on my Weber Genesis II gas grill on a rotisserie. Home Depot is making it easy to grill this holiday season with free delivery on all grills purchased online and free assembly on all grills purchased in-store.

    When purchasing prime rib, aim for around 6 ounces to 1 pound per person. Feel free to go as big as you want with your prime rib roast. Five to 6 pounds feeds my family perfectly. If you have a large crowd to feed, feel free to grab a 10-pound roast . Keep in mind that if you adjust the size of roast you purchase, the cook time will change depending on the size of the roast.

    What Temperature Should I Cook My Prime Rib On

    Among some of the worst methods Ive seen for cooking a prime rib, is to start cooking at like 500°. Thats usually followed by some unreasonable formula of cook time per pound of meat. I can assure you, cooking a prime rib this way will turn out a prime rib that looks like this:

    Seriously, check out social media and other recipes for prime rib and youll see pictures just like the above. This high heat results in the outside of the roast being well-done, and it fades gradually to a medium-ish center. The best piece of the prime rib as you can see, is cooked to baseball glove level.

    Most of these recipes also call for a drip pan to collect the beefs juices. Of course, when youre incinerating a roast at these high temps the meat is going to contract and squeeze out all those juices. Its nice to catch them for an au jus of course, but I want my juices in the meat, not collecting below the meat.

    Anyway, I digress. Who wants to eat something like the above prime rib? Certainly not me. If youre about a roast that looks like the one pictured above, Id encourage you strongly to just save the money on the prime rib and instead just make yourself some chicken. Im kidding, of course, and if youre a well-done person, Im sure its not the first time youve heard this type of joke. So, in summary, keep those temps low and allow the prime rib roast to gradually and evenly come up to your desired temperature for doneness. For me, medium rare is perfect.

    Rib Roast Trimming To Grill Prime Rib Steak

    You may have your roast trimmed whatever you desire by your butcher. Butchers typically remove the bones from the roast before re-tying them. You may place seasonings between the roast and the bones, which benefits this procedure. The bones can be kept in situ and cut removed later if necessary.

    If you wish to trim the roast manually, the idea is to expose as much of the meat as possible so that spices and smoke can reach it. Its not as crucial to have flavorful fat as it is to have flavorful meat. Over the top of this roast, there is usually a thick fat cap that You may easily pull away. This will allow you to get down to business with your flavors.

    Do You Cook Prime Rib Covered Or Uncovered

    Always cook prime rib uncovered. We’re assuming here that you are cooking at the recommended temperature of 250 degrees Fahrenheit. If you cook a prime rib at higher temperatures for long periods of time, the heat from the oven or smoker could cause the exterior of the roast to burn . Follow proper cooking technique and you won’t need to cover the roast.
