To cook your beef ribs on a gas grill, follow the above steps . The only difference is youll need to add wood for a smoky flavor , and its best to sear directly over the burners. We recommend wrapping your ribs in foil about half way through the cooking process.
If you want a smokier flavor, buy some wood pellets or chips and put them in a smoke box or foil pouch to infuse your beef ribs with smoky flavor. It wont be as flavorful as using a pellet grill, but youll still get good results.

Before grilling, you will need to prep the ribs. Make sure to pat your ribs dry first so theyre easier to work with.
Then, using a sharp knife, trim off any excess fat and any silver skin you may see. Also be sure to remove the membrane covering the rib bones by using a butter knife to rib a little holl in the small end of the rack. Using the knife and a paper towel, pull the membrane away from the ribs.
Then, its time to apply the rub. For this recipe, make a herby mixture out of sugar, thyme, oregano, rosemary, red pepper flakes and other seasonings. Season the ribs generously with this blend and let it marinate in the refrigerator. You can change the seasonings according to your palate. If you want a sweeter rub, add more sugar. Or if you want your ribs to have more kick, add extra cayenne pepper or red pepper flakes. The ribs can be left in the fridge for up to two days. There are plenty of meats that you can cook at a high temperature and have them done quickly, but not ribs. They are best done low and slow. To get started, heat your grill to 275 degrees, using a combination of charcoal and hickory wood. Knowing and maintaining the temperature of your grill is crucial during this process.

Most certainly. I wont go so far as to say youll get stick burner type smoke, but you can definitely impart some great smoke flavor by using some inexpensive accessories.
Wood Chips: These work great in either a smoking tube or a homemade aluminum foil packet. To dispel a myth about wood chips, dont soak them in water. Water doesnt make them smolder or smoke any longer. They just sort of steam for a bit to burn off the water before they start smoking.To make a foil packet, just pull off a sheet of aluminum foil about 24 inches long. Then, fold it in half, put about 1 cup of pellets or wood chips on the foil and fold up the edges to create a packet of wood or pellets. Then, poke several holes in the top of it for the smoke to escape.
Pellets: Pellet grills are gaining a ton of popularity these days and some of those pellets provide some great flavor. They can be used on a gas grill in the homemade aluminum foil envelope or an inexpensive smoking tube.
