Why do people love fried chicken? Because it is juicy, tender, and crunchy.

What is the secret to great fried chicken?

The great fried chicken starts with a good quality chicken. In todays modern grocery store you can buy whole chickens, chicken breast, thighs, legs, wings, already cooked, raw, frozen. But if you want great fried chicken, start with a whole chicken and cut it up yourself.

Once you have your chicken cut up for frying, save the legs, wings, and back for stock or soups. Today we are going to concentrate on frying the breast and thigh portions only.

First, we need to season the chicken, then we are going to make some seasoned flour using the same seasoning we used on the chicken and coat our chicken in flour, once it is coated, then we will work on frying the chicken.

Once our chicken is coated we need to get our oil heated up in a heavy pan, and then make sure we are heated to 350 and then place our chicken in the oil skin side down.

Once you get your chicken browned on the skin side, turn it over and let it continue to cook. The thighs will get to temp before the breast does and you will remove them from the frying oil and continue cooking the breast.

The pull temperature for the thighs is between 170-180. Chicken thighs are dark meat and can handle a higher pull temperature. This is after fifteen minutes of resting.

Can I Tell If The Chicken Wings Are Done By The Internal Temperature

    Wings can either be left whole or separated into drumettes and flats. With this method, I remove the wingtip, saving them with additional chicken parts for a future batch of chicken stock. Separating the wing creates more work on the grill, but in my opinion, it makes for easier eating one-hand eating especially when the other hand is clutching a beer.

  • Brush the wings with olive oil and season. Before grilling, its important to brush the wings with olive oil and season with at least salt and pepper.
  • Grill wings continuously over direct medium heat . You can also smoke them over direct low heat . Flip as needed until the wings are almost cooked through and the inside reads 160º F internal, approximately 20 to 25 minutes.
  • Finish over direct high heat . Finish the wings over direct high heat to sear and crisp the skin.
  • Apply sauce, if using. Adding sauce too soon sets the stage for the sauce to burn. If using a sauce, apply it towards the end of the cook or toss with the wings right before serving.

By pressing and holding the CLEAR button for a few seconds, the min/max will be reset to the current temperature. You can hist start on the timer and watch it for 31 seconds. You can then check the min temp to see if it dipped below 157°F .

    What is the safe temperature to cook or store my chicken?

    Although not a popular way to cook chicken, you can use your microwave to cook it. To ensure the safety of the chicken and that the minimum internal cooking temperature is met, follow these guidelines:

    • Microwave on medium-high . A whole chicken should be microwaved for nine to 10 minutes per pound bone-in parts for eight to nine minutes per pound boneless breast halves for six to eight minutes per pound.
    • Place whole chicken in an oven cooking bag or in a covered microwavable pot.
    • Never microwave a stuffed chicken. Food tends to cook quickly and unevenly in a microwave and the stuffing may not reach the safe minimum internal cooking temperature to destroy the bacteria that may make you sick.
    • If you are microwaving parts of the chicken, arrange them in a dish or on a rack so thick parts of the chicken are towards the outside of the dish and thinner parts of the chicken are in the center
