Maximum Temperature Settings On Pellet Grills
Many of the latest generations of pellet grills have a maximum temperature setting of at least 500 degrees. For instance, as I discuss in my Gen 1 vs Gen Traeger Pro Series article.
The same is true for budget/mid-range pellet grills from the likes of Camp Chef, Pit Boss and Grilla Grills, all offer pellet grills with a 500-degree maximum temperature setting. You then have the Weber SmokeFire which provides a 600-degree maximum temperature setting.
As I discuss in my Weber SmokeFire Gen 1 vs Gen 2 article, while I have issues with it as a pellet smoker, as a pellet grill its very capable.

You then have other brands such as Broil King who also offer a maximum temperature setting of 600 degrees and the same is true of RECTEQ pellet grills when their FULL setting is activated.
When you start moving up into the premium/luxury pellet grill brands such a Cookshack, Memphis Grills, Coyote and Twin Eagles these pellet grills have maximum temperature settings between 600 725 degrees.
While a higher temperature setting on a pellet grill is going to provide better searing capabilities, what the cooking grate is made of is also important.
Plan How Much Cooking Real Estate You Need

Before deciding how big your cooker needs to be, you need to ask yourself a couple of questions. How many people will I be cooking for? Do I plan on cooking large cuts or even a whole pig?
Remember that bigger doesnt always mean better. Purchasing a huge pellet cooker can really just mean wasted pellets as they burn more pellets per hour than a smaller model.
A standout feature of pellet smokers is that the temperature is relatively even across the cooking area. As a result, there should be no temperature difference between the top rack and the bottom rack while cooking.
Keeping this in mind, lets discuss the difference between the primary cooking area and the total cooking area.
The primary cooking area refers to the area on the main cooking plate. The total cooking area takes into consideration secondary racks.
Therefore, a large pellet grill with a primary cooking area of 500 square inches, might actually be of less use to you than a smaller cooker with a total cooking area that includes a 450 square inch primary rack and a 125 square inch secondary rack.
If you couldnt be bothered doing the math, thats 575 square inches of total cooking space.
The bottom line is this take stock of what you need, and dont be fooled into thinking that bigger is better.

A Reverse Sear Chicken Breast Pellet Grill
Making mouth-watering chicken breast is easy on a pellet grill. In reverse searing of chicken breast, the chicken is smoked in low and slow heat to get that tender, juicy flavor and then seared at high temperatures for a charred finish.
To make seared chicken breast on a pellet grill, you will require 4 chicken breasts. Rinse the chicken with water and use a paper towel to dry it. In a small bowl, take 2 tbsp paprika, chili powder, cayenne pepper, black pepper, and 1 tbsp thyme, garlic powder and onion powder, and salt. Rub ingredients on the chicken breast and cover the outer part of the meat entirely with BBQ ingredients.
Keep the chicken in a Ziploc bag for an hour and refrigerate. Until then, prepare your pellet grill and preheat it at 225°F.
