Can I Use Pork Loin Instead Of Tenderloin

The short answer is no. Tenderloins cook much faster than pork loins with their small size and wouldnt make a good substitute in this smoked pork loin roast recipe. The times and temperatures wont be accurate.

Do You Trim A Pork Loin Before Smoking

Its not recommended to trim your pork loin before you smoke it, no. You may notice one or two pieces that you want to remove from the meat before you add it to your smoker, but the vast majority of pork loins wont need to be trimmed before you smoke them.

It will be important to remember not to remove the fat cap from the meat, as this will help to give the meat some added flavor.

In fact, you can use the fat on your pork loin to keep the meat moist. If you smoke your pork loin with the fat at the top of the smoker, this can help to consistently baste the meat throughout the cooking process. So you wont have to worry about opening the grill to do this.

The only exception to this rule will be if theres a lot of excess fat surrounding the meat to the point where the smoke wont be able to permeate it.

You should then trim just enough of this fat and connective tissue so that the smoke can properly flavor your meat. But remember to leave enough of a fat cap on the meat itself so that you can get the full smoked pork loin experience, as weve mentioned above.

How To Freeze Smoked Pulled Pork

If youre like me, you often have a hankering for pulled pork when you only have your small family to feed. If you find yourself in this predicament, simply freeze the leftovers!

  • Get your pork cooled to room temperature or colder before putting in the freezer bag. Hot pulled pork will steam and form moisture crystals in the bag. It also seems to result in mushy pulled pork when reheating.
  • Shred the pork before freezing. This will allow you to flatten your bags before adding them to the freezer, saving space and getting your pork frozen faster .
  • Use freezer-safe bags. Freeze the pork in either gallon sized zip top bags or a vacuum sealed bag that is freezer rated. This helps preserve freshness and cut down on freezer burn. It is also crucial during the reheating process.
  • Remove excess air in the bag. Whether you use a food saver or just a regular zip top freezer bag, remove as much air as possible. This will help your meat last longer frozen.
  • Use it or lose it. Frozen pulled pork will last 6 weeks in a fridge/freezer combo, or up to 6 months in a deep freeze if the air has been sufficiently removed. Write the name and date on your freezer bags so you can keep track.

    Gas & Charcoal Grills

You can definitely use a gas grill or charcoal grill when making pork loin. A gas grill will be the easiest of the two to keep the temperature consistent.

Mostly keeping the burners or even just one burner on low should maintain a 225°F temperature. This will vary by make and model of grill used.

When using a charcoal grill, the weber is a great choice. You will have to use a snake technique when loading the grill with charcoal to maintain a low temperature for several hours.

This is when you line up the charcoal along the inside of the grill and light one end. It will slowly burn through the charcoal keeping the temperature low.

Stuffed Pork Tenderloin // Pit Boss Grills

Using the same temperature for cooking and the rule of thumb that I have just mentioned, cooking a 9-pound pork shoulder will take almost the whole day to cook properly.

At a higher temperature or 250 degrees Fahrenheit, it will take around 9 hours for the large pork shoulder to cook all the way through and get to the set internal temperature.

If you use a lower temperature, it will take roughly 12 hours for a 9-pound pork shoulder to be cooked, and make sure that the insides cook with a juicy and tender finish.

    • Invest in a reliable meat thermometer. We use the ThermPro-Wireless Digital Meat Thermometer. For instance, you just set the probes in the meat, set what kind of meat it’s for, and it will let you know when it reaches that temperature.
    • Cook with the thermometer, not the clock. All grills cook differently, and there are so many variables that play a part in the cooking time, such as weather, different types of grills, etc.
    • Make sure you add your wood pellets before you start the grill. Check during the cooking time to make sure you don’t run out.

How Long To Smoke A Pork Butt In A Pit Boss

The total cook time will depend on the size of the pork butt, the temperature of your Pit Boss, and a few other variables. Pork butts, also known as Boston butts, are generally between 6 and 10 pounds and will take around 1.5 hours per pound at 225°F. So a pork butt weighing 6 pounds should take about 8 to 9 hours to cook at 225°F, providing the butt is foil wrapped and not overly spritzed. At the other end of the scale, a 10 pound pork butt would likely take close to 13 to 15 hours if you were to keep the temperature low. However, if you were smoking a larger butt, I would recommend cooking in the 250°F to 275°F range, otherwise you will be there all day.

Other factors can influence the total cook time and should be worked into your calculations. Wrapping will speed up the cook a little, and may shave 1 -2 hours off the total cook time. Spritzing or mopping will slow the cook because adding moisture will cool the meat. Weather also can play a part, especially wintry conditions or humidity. Wind, rain and the cold can cool the metal on your smoker, and when cold air is drawn into your smoker, it slows everything down. Humidity will increase the moisture inside your smoker and therefore slow the cook. Do You Cut The Fat Off Pork Shoulder Before Slow Cooking

For most recipes, I would usually recommend cutting the fat off of the meat before cooking.

However, the main point is to leave enough to make the pork shoulder juicier.

I prefer the term trim rather than cut as you do need some of the fats. Just remove excess fat but leave the fat cap so that the pork shoulder does not dry up while cooking for a long time.

Another trick that I usually do is to leave the fat as it is without trimming or cutting some of it.

I do the trimming of the fat later once the pork shoulder is done.

The problem with this is that you might have a hard time getting the seasonings into the meat.

So I suggest that you leave the fat only when you marinate or brine the pork shoulder overnight.

Roasted Pork Loin — On a Traeger Wood Pellet Grill

Pork loin and tenderloin are typically roasted or grilled for slicing, and neither option is the ideal choice for pulled pork when compared to fattier cuts like pork shoulder. But all the extra fat that makes the latter great for pulled pork makes it difficult to fit into a calorie conscious diet.

So we put pork loin and pork tenderloin to the test on a Traeger pellet grill. And good newsyou can make awesome BBQ pulled pork with pork loin using the right methods.

Pork tenderloin, on the other hand, gave us trouble. No matter how we smoked, wrapped, and braised, it always ended up a little too dry and tough for us to recommend. Leave the pork tenderloin for faster cooks and slicing .
