How To Choose Pork Steaks

If you live in the Midwest or in the South, pork steaks should be pretty easy to find. The key to choosing pork steaks, however, is knowing what to ask for.

You are most likely to find them being sold under the name pork shoulder steaks or pork blade steaks.

Of course, depending on where you live, these pork steaks may not always be so easy to come by. Not to worry, though, there is a solution!

Look for the cut pork butt instead. This is where the pork steaks are taken from. You can then slice this cut into steaks yourself or ask your butcher to do it for you. I would suggest choosing a boneless pork butt for this endeavor, however.

Slice the steaks into 3/4 inch thick steaks or 1 inch, depending on your preference.

Everything You Need To Know About Grilling Pork Chops

  • 1 half freshly squeezed lemon juice

Instructions:

  • In a large bowl, make pork chop marinade by mixing brown sugar, kosher salt, black pepper, garlic, and onion powder. Add in olive oil, soy sauce, Worcestershire sauce, balsamic vinegar and lemon juice. Whisk together.
  • Place pork chops in casserole dish and pour marinade over them. Cover and place in the refrigerator for at least 2 hours.
  • If using a gas grill, preheat to medium-high 10 minutes prior to grilling. If using a charcoal grill, prepare it so you will have a place for indirect heat by banking coals on each side of the grill, leaving the center of the grill without coals/heat. Light charcoals at least 20 minutes prior to grilling. Temperature in either type of grill should be 375-400 degrees prior to putting on the pork chops.
  • Using your tongs, place loin chops on grill and sear for 2-3 minutes per side.
  • Move pork chops to indirect heat , and continue grilling for 4-6 minutes on each side, depending on their thickness. If you have a meat thermometer, make sure the thickest part of the chops reach 145 degrees.

    How Should Pork Be Cooked

    With the knowledge that pork is safe to eat cooked to medium rare and above, there is still some debate as to what the optimal level of doneness is with pork, especially pork steaks.

    The USDA, for one, recommends cooking pork to at least 160 degrees Fahrenheit, which would be medium. Many chefs and gourmets prefer their pork cooked like this, with a pink center. Cooking pork to medium provides a juicier, more tender bite than medium well or well done, which is typically dry and tough enough to run the risk of turning someone off pork entirely.

    Others, however, have taken to experimenting with medium rare pork. Still safe to eat, this form of pork looks and tastes more like a perfectly cooked steak, with a pink to red center and more juices. However, medium rare pork runs the risk of being chewy.

    It should also be noted that ground pork, no matter what you intend to do with it, should always be cooked completely. Unlike with a pork steak, ground meat carries more risk in eating it undercooked, as any forms of bacteria that would normally be seared from the surface of a pork steak would not be affected within a ground pork patty or the like. For this reason, ensure that any ground pork you cook with is cooked to a final temperature of 170 degrees Fahrenheit.

    What Is Pork Butt Vs Pork Shoulder

    Theyre basically the same cut. Pork butt & pork shoulder are both cuts from the shoulder region on a pig. Pork butt is a from a little higher than the pork shoulder cut. Both are very well marbled and super delicious. Usually used for slow smoking/cooking to make pulled pork and other slow cooked roasts. However, we find them perfect for grilling when cut into steaks about 1/2-3/4 thick. Nearly always super juicy and flavorful. But if cut too thick it will be a bit tougher so dont go crazy on your steak thickness. As a super added bonus, it is often one of the less expensive pork cuts and what we prefer when grinding meat for homemade sausages. In our eyes, pork butt is often undervalued and simply magical.     How To Make The Best Pork Steaks

    Cooking pork steaks is easy start by prepping your charcoal grill for indirect heat.

    Rub the pork chops with the garlic mustard aioli, then season them with the salt and Girl Carnivore Chick Fest seasoning.

    Add wood chips to your grill.

    Grill the chops over direct heat for 1 minute, rotate the chops 90-degrees , and then grill another minute.

    Move the pork to indirect heat and grill pork steaks for 6-10 minutes, flipping once until they reach an internal temperature of 140-F.

    10 Best Grilled Pork Shoulder Steak Recipes

    No not at all steak refers to the cuts from the shoulder or butt vs chops that come from the loin. Pork blade steak, pork butt steak, and blade steaks all refer to the same cut vs. being different cuts of meats altogether.

    Chops are leaner and at more risk of drying out. Steaks have a lot of marbling so the fat protects them from drying out and also adds more flavor as it melts during grilling. Chops can be either bone-in or boneless, but steaks are generally boneless.

    In reality, often times the names are used interchangeably with the exception of boneless pork chops.

    That being said pork chops and pork steaks both work in this recipe. However, I would avoid a boneless pork chop like pork loin.

If you are grilling extremely thick chops, the bone will start to affect the timing of your cook. 1 1/2 inch thick boneless pork chops typically cook through in 14-18 minutes and bone-in chops at that thickness can take up to 20 minutes or more.

    Although time is a nice guideline for a recipe, the absolute most important factor when cooking pork chops on the grill is to pay attention to internal temperature.

My cousin, Carol, lives in Maryland and has used the information provided here to obtain pork steaks in her area where they are not normally available. You can obtain them most everywhere if your local purveyor handles whole Boston butt or pork butt roast or any of the myriad of other names such as the pork shoulder butt shown below:

    Pork steaks are also known as blade steaks and simply put, pork steaks are merely a sliced Boston pork butt or pork shoulder or pork butt, pork shoulder butt or

    ***Editors Note ~ But why is it called a butt? Its not from the butt of the pig, its a shoulder. And what does Boston have to do with it? The reason is that this cut of meat was often sent on old wooden sailing ships to feed the crew. They were packed with salt in huge barrels called butts. And those butts were often sent to Boston as it was the primary port for our country at the time when the name took. Thats how a pork shoulder became known as a Boston butt***
