Pork Loin Wrapping: A Question of Good Taste

Many people believe that wrapping a pork loin in foil results in a better taste because it helps to keep the pork from touching too much outside air and causing tough skin or meat.

There are several pros and cons to wrapping a pork loin, so its important to decide which method is best for you and your specific dietary needs. Here are three factors to consider:

1) The size of the pork loin: A small or medium-sized pork loin can be wrapped in foil successfully, but a large or giant pork will require more effort and may not result in a better taste.

How Long Does It Take To Grill A 2 Lb Tenderloin

Grilling a 2-3 lb tenderloin can take anywhere from minutes to hours. The time it takes will vary depending on the type of grill, the tenderness of the meat, and whether or not you use any cooking spray.

Its important to keep things simple when grilling, and using a known quantity like degrees Fahrenheit will make things easier.

How To Choose Pork Steaks

If you live in the Midwest or in the South, pork steaks should be pretty easy to find. The key to choosing pork steaks, however, is knowing what to ask for.

You are most likely to find them being sold under the name pork shoulder steaks or pork blade steaks.

Of course, depending on where you live, these pork steaks may not always be so easy to come by. Not to worry, though, there is a solution!

Look for the cut pork butt instead. This is where the pork steaks are taken from. You can then slice this cut into steaks yourself or ask your butcher to do it for you. I would suggest choosing a boneless pork butt for this endeavor, however.

Slice the steaks into 3/4 inch thick steaks or 1 inch, depending on your preference.

When preparing an outdoor grill for pork chops, youll need to heat it for two levels of heat. The chops get seared over high heat to get those gorgeous grill marks for about three minutes per side, then moved over to medium heat to finish cooking, which will take anywhere from four to seven minutes depending on the thickness of the chops. This creates a nice crust on the outside and juicy meat inside. And remember to keep the grill covered the whole time so that heat doesnt escape.

Pork steaks are full of collagen and fat and come from a part of the pig that is used in every step which makes the meat tough. In order to get that pork steak to be tender and glorious you have to take them up to 180F.

Follow these four cardinal rules for perfect, juicy grilled pork chops.

I made a couple of tweaks to the original recipe. One I eliminated the MSG the recipe called for and replaced it with allspice. Allspice and MSG aren’t similar, I am just a big fan of allspice.

I also reserved some of the rub to make the sauce then just added in some extra cayenne and black pepper, plus sugar.

Using Gas Grill To Cook Pork Steaks

Grilling was introduced with charcoal and pellet grills. We will have to spend a couple of minutes to light up the charcoals. However, gas grills have eliminated the need to light it manually. Gas grills use propane gas that lights up just with a spark, so you wont have to struggle with burning down charcoals. Gas grills allow you to variate the flames by increasing or decreasing the gas supply. So you can increase or decrease the flames according to your need. They might not give you the smoky barbecue aroma, but they will save up a lot of your time and effort.

    How Should Pork Be Cooked

With the knowledge that pork is safe to eat cooked to medium rare and above, there is still some debate as to what the optimal level of doneness is with pork, especially pork steaks.

The USDA, for one, recommends cooking pork to at least 160 degrees Fahrenheit, which would be medium. Many chefs and gourmets prefer their pork cooked like this, with a pink center. Cooking pork to medium provides a juicier, more tender bite than medium well or well done, which is typically dry and tough enough to run the risk of turning someone off pork entirely.

Others, however, have taken to experimenting with medium rare pork. Still safe to eat, this form of pork looks and tastes more like a perfectly cooked steak, with a pink to red center and more juices. However, medium rare pork runs the risk of being chewy.

It should also be noted that ground pork, no matter what you intend to do with it, should always be cooked completely. Unlike with a pork steak, ground meat carries more risk in eating it undercooked, as any forms of bacteria that would normally be seared from the surface of a pork steak would not be affected within a ground pork patty or the like. For this reason, ensure that any ground pork you cook with is cooked to a final temperature of 170 degrees Fahrenheit.

Grill Rest & Serve Your Pork Steaks

  • Cook. Place your pork steaks on the grill and cook for 8-10 minutes, then flip and grill for another 8-10 minutes on the opposite side. After that, flip as needed to finish with a perfect caramelized sear and your desired level of doneness .
  • Rest. Finally, transfer your pork steaks to a plate or cutting board and loosely cover them with foil. Allow them to rest for 5 minutes before serving.
  • Add on a side of roasted potatoes and sauteed asparagus for a delicious, well-rounded meal! These grilled pork steaks also taste fantastic with a side of roasted vegetables or twice-baked potatoes. Enjoy!

What Is Pork Butt Vs Pork Shoulder

Theyre basically the same cut. Pork butt & pork shoulder are both cuts from the shoulder region on a pig. Pork butt is a from a little higher than the pork shoulder cut. Both are very well marbled and super delicious. Usually used for slow smoking/cooking to make pulled pork and other slow cooked roasts. However, we find them perfect for grilling when cut into steaks about 1/2-3/4 thick. Nearly always super juicy and flavorful. But if cut too thick it will be a bit tougher so dont go crazy on your steak thickness. As a super added bonus, it is often one of the less expensive pork cuts and what we prefer when grinding meat for homemade sausages. In our eyes, pork butt is often undervalued and simply magical. 10 Best Grilled Pork Shoulder Steak Recipes

No not at all steak refers to the cuts from the shoulder or butt vs chops that come from the loin. Pork blade steak, pork butt steak, and blade steaks all refer to the same cut vs. being different cuts of meats altogether.

Chops are leaner and at more risk of drying out. Steaks have a lot of marbling so the fat protects them from drying out and also adds more flavor as it melts during grilling. Chops can be either bone-in or boneless, but steaks are generally boneless.

In reality, often times the names are used interchangeably with the exception of boneless pork chops.

That being said pork chops and pork steaks both work in this recipe. However, I would avoid a boneless pork chop like pork loin.

Pork is perfectly cooked through, juicy, and safe to eat at 145 degrees F. Get yourself a good instant-read thermometer to avoid over or undercooking your grilled pork chops. I recommend ThermoWorks products. Theyve always produced a fast and reliable result.

Benefits Of Grilling Pork Steaks Or Indirect Heat

You must wonder why you cant just place the pork steaks on direct flames and cook it for 5 minutes. Well, the true grilling enthusiast knows that low and slow heat prepares the best meat for the dining table. Same as the case with pork steaks. They tend to lose moisture if exposed to direct flames. So it is always recommended to place them on indirect heat and cook them slowly. Once they have reached the inner temperature or 145 degrees Fahrenheit, you can move them on direct heat for several minutes to have grill marks and brownish color on the outer side.

The reason is that this cut of meat was often sent on old wooden sailing ships to feed the crew. They were packed with salt in huge barrels called butts. And those butts were often sent to Boston as it was the primary port for our country at the time when the name took. Thats how a pork shoulder became known as a Boston butt***
