I like to cut potatoes into small cubes of approximately 1-inch square. This ensures crispy potatoes on the outside with a soft center.
Should You Boil Potatoes Before Grilling
Its a good idea to boil potatoes in salted water for about five minutes before direct grilling them. The salt in the water will help flavor the potatoes. Also, boiling will partially cook the potatoes which will let you direct grill at a higher temperature, for a crispier exterior.
If you don’t pre-cook, cooking at high temperatures might leave you with potatoes that are crispy on the outside, but still raw in the middle.
Pre-cooking gets the middle of the potatoes nearly cooked, so you can focus on getting crispy skin and glorious grill marks.
Tips For Making Grilled Potatoes In Foil
If youre more accustomed to preparing potatoes in the oven or on the stovetop, these tips will help you nail spuds on the grill.
- Slice the potatoes into evenly sized pieces. To ensure the potatoes cook evenly, make sure they are sliced into even-sized pieces. If they are mismatched, some will turn out raw and others will be perfectly cooked!
- Dont overstuff the foil packet. Make sure to assemble the potatoes in a single layer in the foil packet. If they cant all fit, simply separate them into 2-3 packets instead.
- Make sure the foil packet is completely closed. To prevent oil from seeping out of the aluminum foil, make sure the sides are completely sealed up before popping the packet on the grill.

Storing & Reheating Best Practices
To keep your potatoes fresh for up to a week, store them in an airtight container in the fridge. This will prevent them from drying out and turning gummy in texture. To reheat them, pop them in a skillet with a little oil and saute them until crispy. You can also reheat them in the oven or an air fryer.

Grilled Red Skinned Potatoes
- 3 or 4 medium red skinned potatoes
- Extra virgin olive oil to coat
- 1/8 tsp cayenne pepper
- Sea salt and cracked pepper to taste
Directions:
1. Heat the GF grill to high.
2. Peel the sweet potato. Cut in half horizontally. Slice the halves into rectangular fries that are 1/4 to 1/2 approximately.
3. Toss the potatoes in EVOO, garlic, cayenne, salt and pepper to evenly coat.
4. Cook the fries on the grill with the top closed for approximately 10 minutes. The timing will depend on how much moisture is in the potatoes. After 5 minutes you may want to turn the fries, as the bottom sides tend to cook faster and darker.
How To Store Leftovers
It may come as a surprise, but cooked spuds make good freezer meals!
- Refrigerate: Just put them in an airtight container, and refrigerate them for up to 4 days.
- Freeze: Transfer leftovers to a large freezer bag and freeze them for up to 3 months.
- Reheat: Thaw one portion and heat them up in a preheated oven for 5-7 minutes. Alternatively, warm them in a microwave for a few minutes, or on the stove in a large skillet.

What If I Dont Have Space Over Direct Heat
Grilling other things at the same time? Simply sear your grilled red potatoes in foil over direct heat for 5 minutes and then move the foil-pack to the upper rack to continue cooking while you grill your other food.
You will likely need to grill your potatoes longer due to the fact that they arent over direct heat, but this method also works great.

Just Not Directly On The Grill Grates
Grilling sliced potatoes directly on the grill grates doesn’t work so well. They easily stick and the remnants can be difficult to clean off. It’s not impossible, but in my experience, it has never been worth it.
In a Skillet – My preferred method. Easy to move around and on/off of the grill. Gets super hot for golden-brown results. You can cover the skillet with foil to cook the potatoes until they are tender to speed up the cook if you prefer.
In Foil – People love cooking in foil packets. You can make a nice little package of potatoes, oil and seasoning and place it right on the grill. The potatoes will cook in their own little oven, then once tender, you open up the packet and let them brown, though it is a little harder to stir them and get them crispy than it is in a skillet. Be sure to poke some holes to allow the moisture to escape while they cook.
In a Grill Basket – Grill baskets are great because your food is still contained, but can still kiss the fire of the grill. And it’s easy to stir the potatoes to brown all sides.

A baked potato with butter is a great side, but a larger potato with the right toppings can be a full meal. Top it with chili, cheese, and sour cream for knife and fork feast. Add fried onion rings, crispy bacon bits, and pickled jalapeños, and you have a main meal disguised as an appetizer.
Not sure of what your dinner guests prefer? Make a grilled baked potato bar. Each potato is an open slate for a wide variety of toppings. You provide the potato, and your guests bring the creativity.
No matter your preference, treat your next baked potato to the great outdoors and take it to the grill. You will not be disappointed.

How Do You Tell If Fried Potatoes Are Done
Once I have cooked the potatoes for at least 4 minutes on each side, I will see if they slices are fork tender. Once they are tender, I cook them until they are crispy. We like our potatoes to be extra crispy potatoes.
We do recommend slicing the potatoes about the same size. This ensure that the potatoes are done about the same time.
How To Set Up The Grill
To act like an oven, set up the grill for indirect heat. In other words, place the potatoes on the grill so they are not directly over the fire of the burners or coals. Instead of the direct searing action of a hot grate, the potatoes are cooked by heat supplied through convection and radiation.
- On a gas grill, this means placing the potatoes over unlit burnersthe burners on the other side should be on high.
- On a charcoal grill, the lit coals are swept to one side and the potatoes placed on the grates over the charcoal-less side.
