Maybe your chicken is simultaneously raw and burnt, and even though you marinated your bird, its still bland. What did you do? Knowing what mistakes to avoid when cooking chicken on your grill can help you turn that potential party foul into a party-ready fowl.

Grilling Times At A Glance

These grilling times are based on a minimal internal temperature of 165 degrees F, as recommended by the USDA.

  • Boneless chicken breasts: 7 to 8 minutes per side
  • Bone-in chicken breasts: 15 minutes per side
  • Boneless, skinless chicken thighs: 5 to 6 minutes per side
  • Bone-in chicken thighs: 8 to 10 minutes per side
  • Chicken wings: 25 minutes total, flipping occasionally

Place The Chicken On The Grill

Put the chicken on the grill by placing larger pieces closer to a higher temperature and smaller pieces further away. Move pieces closest to the heat in the following order:

Everything will cook evenly, and nothing will burn, when chicken pieces are placed appropriately. With this arrangement, the total cooking time will be determined by the largest pieces . Expect about 45 minutes of grilling total.

How Long To Marinate Chicken

Allow chicken to marinate for at least 30 min and up to 4hrs.

This allows enough time for the marinade to work its magic and add flavor while tenderizing the meat.

Longer than 4 hours can change the texture of the chicken making it mushy.

I love making grilled chicken breasts in large batches to put on top of salads, in weekly meal prep, into quick pasta dishes, or even into chicken noodle soup! It goes so well with just about anything.

Charred and Tender grilled chicken spiced with a special blend of homemade taco seasoning can be grilled or cooked on the stove-top. Its delicious in tacos, burritos, on salads, or for meal-prep!

A batch of perfectly grilled chicken can go a long way. I like to season a few pounds of boneless and skinless chicken thighs or breasts and keep them in zip seal bags in the fridge and freezer. When needed, just pop a bag out of the fridge or freezer and grill on an outdoor grill or right in a pan on the stove top. Use it to make tacos, wraps, on a salad or rice.

Just like Chipotle, I like to use boneless skinless chicken thighs rather than breasts because they are always tender and wont dry out. Chicken breasts will also work for this recipe but be sure not to over-cook them.

How Long To Grill Boneless Chicken Breasts

Depending on the thickness of your chicken, allow about 15-20 minutes to grill boneless chicken breasts. Cook the chicken over direct heat for the first 10 minutes or until nicely seared then move to the indirect heat for another 5-10 minutes depending on its thickness.

Cook until the chickens internal temp is 165° F, or juices run clear. In testing the chicken breasts for internal temperature, slide the thermometer laterally at one end, so it hits the center of the piece. Be careful not to overcook the grilled chicken, otherwise itll become tough and rubbery.

Give it a rest. Once the grilled chicken breasts are cooked, transfer to a plate and tent with aluminum foil to allow the juices to rest for about 5 minutes. Cutting the chicken too early will cause the juices to run out and it wont be as juicy.
