How To Fold A Foil Packet
With some recipes, you can get by fine using one layer of foil, but I recommend using two sheets for this grilled shrimp scampi recipe.
Heres why. When you fold the foil over the pasta and liquid, youre going to create steam, which will escape and drip out. If you add another sheet of foil over the original packet, youll collect the steam in that layer, making cleanup a breeze.
This recipe is for four foil packets, so start by tearing off eight 16-inch sheets of Reynolds Wrap® Non-Stick Foil. Im using their Non-Stick Foil to prevent the pasta from sticking to the bottom. They also just released new foil boxes with a tab that makes it easier to open and close the box. The new boxes are color coded by foil type, look for the yellow color for non-stick foil.
Stack two sheets on top of each other with the dull side facing up. The dull side is the non-stick side. You should have four stacks.
Because were working with liquid, lay the sheets on a rimmed sheet pan. This will create a slight concave, keeping the liquid from spilling out.
Layer the pasta and liquid onto the center of the foil sheets along with the butter, garlic, pepper flakes, salt and pepper.
Working with just the top sheet, bring the long sides of the foil up to the center. Join them so theyre even and touching. Fold the foil over about 1/2-inch a couple of times.
Then, fold the short ends in about 1/-2 inch toward the center a couple of times.
How Long Do You Cook Shrimp On The Grill
Because the shrimp is sealed inside grill foil packets with other veggies, its able to be cooked for longer than if you had simply laid it directly onto the hot grill.
For these shrimp boil foil packets, I used large shrimp and wrapped everything in two layers of foil. In total, the foil packets were on the grill for 12 to 15 minutes, and the shrimp turned out perfectly!
What Youll Need For A Southern Shrimp Boil
- Shrimp Peeled and deveined. If using frozen make sure it has thawed before using.
- Corn on the cob cut into 2 inch slices
- Smoked sausage or Andouille sausage Youll need to use smoked or pre-cooked sausage or kielbasa. Just a little adds so much flavor to the packet.
- Old Bay Seasoning A true Southern seafood boil always contains some Old Bay.
- Pantry staples garlic, lemon juice and butter.
- New potatoes purely optional but if adding youll need to cook them in advance in the microwave or on the stove.

Preparing Your Grill Foil Packets
To give your potatoes a little bit of a headstart, first place them in the microwave and put them on the potato setting for 5 minutes. I often poke a few holes into the potatoes with a fork and wrap them in a damp paper towel for this step. This allows the potatoes to start cooking and will ensure they are fully cooked when you remove them from the grill.
Next, place a piece of aluminum foil down and fold in the corners of the foil.
- Add the shrimp, potatoes, and corn.
- Add in a Tbsp of butter
- Then sprinkle a Tbsp of your seasoning mix.
- Cover the ingredients with the foil and secure packet.
When cooking shrimp on the grill in foil, place the shrimp foil packets on the heated grill and cook for a full 20 minutes. Carefully remove your foil packets from the grill and keep the foil wrapped tightly until you are ready to serve.
When its time to eat, unwrap and enjoy.

Cheesy Ranch Chicken And Bacon Packets
Toss together 1 pound halved small potatoes,8 ounces broccoli florets,1/2 envelope ranch powder, and 1 tablespoon olive oil in a small bowl. Divide between the packets. Top with 4 boneless, skinless chicken breasts and season the chicken with the remaining ranch powder. Sprinkle with 1/2 cup cooked, chopped bacon and 1 cup shredded cheddar cheese. Tightly seal each packet. Grill or roast until the chicken is cooked through, 22 to 25 minutes.

I dont know about you, but being able to customize dinner depending on individual likes and dislikes is a plus in my house. For this dish, you can add almost anything! Since shrimp dont take long to cook, youll need to pre-cook the corn and new potatoes if youre going to add them in.
To do this, I just place them in the microwave for a few minutes. I cooked the corn for 1 minute and it was just perfect. I dont think a shrimp packet needs potatoes but itll be a more traditional shrimp boil if you have some new potatoes. Either par boil them or microwave for a short time, until just turning soft.
For the meat, choose pre-cooked andouille sausage or kielbasa which are great flavor enhancers. If you want to use raw sausage, youll need to cook it on the stove before adding to the packet.
