Thaw And Remove Shells

Shrimp Marinade Recipe – Perfect for the Best Grilled Shrimp!

Before marinating, the shrimp need to be completely thawed. If you are transporting them in a cooler, this might happen naturally. If they are still a little frosty, the best way to fully defrost them is to place them in a large bowl of water and let them soak for about 10 minutes.

Once theyre done defrosting, you will then want to remove the shell, but leave the tail on.

While the shell can act like a heat buffer while grilling , it prevents the marinade from penetrating into the shrimp . It also puts the exterior char on the shell not the meat. Thats why like to remove and discard the shells before we begin the marinade.

Shrimp shells smell a little fishy, so we recommend putting them in a disposable zip top baggie, otherwise your trash can is going to have an aroma.

Solution #: The Baking Soda Trick

    Serious Eats / J. Kenji López-Alt

So far, I’d been looking at methods of improving browning. What if I were to instead look at methods to keep the shrimp juicier and plumper as they cooked? I recalled some testing I’d done on shrimp while developing a recipe for wonton soup. In that recipe, I recommend tossing the shrimp with a mixture of salt and baking soda and letting them rest for at least 15 minutes. The salt helps the shrimp retain moisture as they cook, while the baking soda gives them a firm, crisp texture. I wondered if the same method would work for other cooking techniques, so I gave it a shot.

    Serious Eats / J. Kenji López-Alt

I grilled a batch of shrimp treated with baking soda next to a batch of shrimp with no baking soda and compared them side by side. Turns out, it works quite well. No question, the baking sodatreated shrimp came out plumper and juicier than their untreated brothers. What’s more, the baking soda actually helped the shrimp brown faster as well. The Maillard reaction, responsible for producing those delicious browned flavors, takes place faster at higher pH levels. Alkaline baking soda raises the pH, giving you superior browning in less time.

Is It Better To Grill Shrimp With Shell On Or Off

The second solution is not to peel off. Cook the shrimp with their shells intact to ensure juicier, tender shrimp. As a temperature buffer, these shells aid in keeping the meat from overcooking while also developing a lot of flavor in them.

The Best Way To Grill Shrimp

When cooking shrimp over direct heat, I always recommend that they be done quickly. Grilling them for as long as indicated below depending on their size is appropriate for the largest and most succulent shrimp. Grill small shrimp for about 5 to 8 minutes, or until they are opaque. Grill your shrimp for 7 to 9 minutes, or until they are opaque, without the shells on if you prefer to cook them that way. Because the shells contain all of the delicious juices, grilling shrimp in them ensures that the meat tastes much more moist and flavorful.

If you want to know how to easily cook shrimp for shrimp cocktail, see this post showing how to poach shrimp. Youll never want to buy pre-cooked shrimp again after seeing how easy it is.
    • Olive Oil: Our shrimp marinade for grilling starts with olive oil for flavor and moisture. A little oil keeps the shrimp juicy! You can substitute avocado oil or vegetable oil if thats what you have on hand.
    • Lemon Juice: This citrus juice will tenderize the shrimp as well as add a bright, fresh flavor.
    • Salt and Pepper: Shrimp doesnt come seasoned! Salt and pepper is all we need to enhance the natural flavor of the shrimp.
    • Parsley: Roughly chopped fresh parsley adds a bright green color for contrast and also gives a bright flavor to the grilled shrimp.
    • Garlic: Youll need three cloves of garlic, minced finely, for this recipe . I prefer to mince my own, but you can use prepared minced garlic if you prefer. Garlic is our main flavor note in this recipe, so dont skimp for this shrimp!
