The temperature of your grill depends on the thickness of the cut of flesh. It is very important to understand that thickers slabs of meat need lower heat and thinner cuts require less temperature.
Lets learn about the best temperature for grilling different steak thickness:
- For 1/ 2 inch thickness: if you are grilling on charcoal grills, ensure that the coals are not too hot. They must be medium-hot and not covered with ash as it can lessen the temperature. The surface temperature of the flesh will be about 425 to 450 degrees.
- For 3/ 4 to 1 inch thick: ensure that you have to maintain a medium temperature of coals with maybe a light dusting of ash. The temperature must be between 360 degrees to 400 degrees depending on what type of flesh you are grilling.
- For 3/ 4 to 1 inch thick: allow the medium-low coals in the charcoal grill and check to ensure that there should be a solid layer of ash on top so that the temperature of your grill will be between 325 and 350 degrees. Do You Close The Grill When Cooking Steak
Grilling with or without a lid If youre searing steaks and need to keep an eye on the situation, leave the lid open. Once youve switched it to indirect heat, you can close the lid and let the smoke do its work for you. Quick-cooking meals can normally be cooked with the lid open the entire time.
Tips For Cooking Steak
- Let your steak rest on the counter for 30 minutes to an hour before cooking. This allows it to come to room temperature and ensures that the internal temperature reading will be accurate. While you’re at it, season the steak all over with salt and pepper.
- Know your salt. Our Editors advise, “Avoid standard table and iodized salts. Anything with a fine grain has a tendency to over season your steak. Instead, sprinkle on medium grain sea salt to compliment your grilled beef.”
- Rotate and flip your steak often while grilling to develop a nice crust. If your steak isn’t sizzling, the grill’s not hot enough.
- Thanks to residual heat, your steak will continue to cook even after you pull it off the grill. For this reason, we advise removing your steak from the heat when it’s five degrees shy of your desired temperature. It will fully cook to your desired doneness while it rests.
- After removing your steak from the heat, let it rest on a platter for 5 minutes to seal in all those juices, then slice it against the grain.

The Two Best Ways To Grill Steak
The ideal grilled steak has an appetizing browned exterior with tender, still-pink meat inside. The tricky part is making sure that you dont burn the surface of the meat before the inside gets warm enough to eat, or cooking the inside too much before getting those nice surface grill marks.
There are two ways to go about it.
Direct grilling: Cooking the steak over high heat, and flipping occasionally until the meat reaches the desired internal temperature .
Reverse searing: Cooking the steak slowly at a low temperature with indirect heat to get the meat 10 to 15 degrees from the final desired internal temperature, then finishing by cooking over high heat to get browning and grill marks.

First, always purchase high-quality meat. The quality determines the texture, tenderness, and how flavorful the steak will taste.
The thicker the steak, the easier it is to cook and the better it will taste. Stop by your local butcher shop and ask for exactly what you want, i.e., a 2 thick-cut steak. Most grocery stores stock steak that is ½ to 1 thick. Thin steak cooks faster and has less flavor.

The sides should be a rich brown color and the top and bottom charred darkly . This steak will have some play through the middle, but feel firm to the touch.
For a 1-inch steak, place steak on a hot grill for 6 minutes. Turn and continue grilling for another 4 minutes until an internal temperature of 140 to 150 F is reached.

This allows quick searing of the steak to develop the Maillard reaction. Its a chemical reaction creating a nice crust on the steak, great flavors and it seals in the juices.
The chemistry of the Maillard reaction involves breaking down the proteins in foods into individual amino acids that react with the sugars in foods when in the presence of high temperature.

To get the perfect sear, you need to get the surface of your steak up to 285 degrees Fahrenheit. This will initiate the Maillard reaction, giving your meat a pleasing color.
Fourth Position And Testing For Doneness
As you prepare to turn the steak for the last time, its time to start checking for doneness. The steak should show no red around the side and the top side should have a rich brown color. As you pick the steak up to rotate it 45 degrees , feel the density of the steak. A medium-rare steak should be firm but still have a good amount of give. Close the lid of the barbecue and continue grilling.
After this last position, turn down the heat on your grill and, if needed, test the temperature of the steak. The internal temperatures for different levels of doneness are:
- Rare: 120 to 130 F
- Medium Rare: 130 to 135 F
- Medium: 140 to 150 F
- Medium Well: 155 to 165 F
- Well: 170 F or higher
If your steak needs more cook time, leave it where it is and continue grilling on medium heat until done.
