New Steak Shop In York Has Neighborhood Vibe
When Robert Bryant was ready to break out The SteakOut from its home at the West Side Café, he had the option to move the business wherever he wanted, but moving out of York was never an option.
York has always supported me through all my different ventures, said Bryant, who dabbled in photography and graphic design before becoming a chef at The SteakOut. I can give back to a city that needs it. I can actually give back to York.
Bryant, 34, will open The SteakOut at the former Market Street Thai location at 917 E. Market St. on May 23. While the restaurant will serve a variety of food — from burgers to seafood — The SteakOut features the North Philadelphia cheesesteak at its core.
Thats because Bryant, a William Penn graduate, has mastered the art of the cheesesteak.
It starts with the bread Bryant insists on Amarosos rolls and cooking the meat with the chop, a technique where Bryant uses the edge of two metal spatulas to flip and spread the steak on the flat top grill. He tops the steak with slices of American or Provolone cheese, but never Cheez Whiz whiz may work for the South Philly tourist hotspots Pats and Genos, but not for the North Philly style.
The food is one thing, but the atmosphere at Maxs is what Bryant hopes to develop at The SteakOut. Its the same type of vibe found at a local barber shop where patrons come in just to chat about everything from the local high school hoops scene to national politics.
