There will never be an end to the debate of who makes the best cheesesteak in Philly, and for that, were blessed. Because while those of us in Philadelphia get to argue the merits of one classic joint versus another, the rest of the country seems to have trouble figuring out what a cheesesteak actually is.

Theres really not all that much to it. Three, maybe four ingredients. Minimal cook time. Slap it together. Raise to mouth, hunch over, dig in.

And yet restaurants, fast-food chains and delis around the world manage to mangle cheesesteaks into creations that, while possibly tasty, would bewilder any true Philadelphian. For a chronicle of the most egregious examples, check out , a Twitter account set up in 2011 for the specific purpose of shaming unworthy pretenders.

As a public service, weve decided to help advance the cause. What makes a cheesesteak a real cheesesteak? Read on.

The Best Cheese For Philly Cheesesteak:

The most popular cheese is mild provolone. We have tested a variety of provolone brands and the only one we didnt enjoy was aged provolone from Costco. The flavor of aged provolone cheese was overpowering. Another popular option is white American cheese. Some restaurants in Philadelphia add a Velveeta-like cheese but we like provolone best.

Use 80/20 Beef For A Chopped Cheese

The best way to cook this sandwich is on a large griddle. Since few home cooks have one, this recipe makes modifications using a pot and a cast iron skillet.

    Simply Recipes / Nick Evans

In a bodega, a chopped cheese often starts off with one or two pre-formed hamburger patties. At home, I like to start with an 80/20 mix of ground beef so there is plenty of fat in the filling. If you go with something leaner, you might want to add a drizzle of oil to the pot before cooking .

If you use an 80/20 blend though, just add the ground beef to a pot over medium-low heat and let the beef slowly cook, rendering out the fat. Stir regularly as the beef browns. After the beef is browned, add the onions and garlic, and stir them into the beef. They will essentially cook in the rendered fat from the ground beef. After 4-5 minutes, they will be softened.

Season the beef filling with salt, pepper, and Worcestershire sauce. The filling is now ready to use in your chopped cheese sandwiches.

Philly cheese steak is a sandwiches made of thinly sliced beef and melted cheese on a long roll. The dish originated in Philadelphia, Pennsylvania, and has since become a popular menu item in many restaurants across the United States. To cook philly cheese steak on the grill, first preheat the grill to medium-high heat. Then, thinly slice the beef and cheese. Next, place the beef and cheese on the long roll. Finally, grill the sandwich for about 5 minutes, or until the beef is cooked through and the cheese is melted. Philly cheese steak is a delicious and easy-to-make sandwich that is perfect for any occasion. Whether you are grilling for a crowd or just want a quick and easy meal, philly cheese steak is sure to please.

Grilling the steak allows for something different from what Ive usually had on it. We will serve the meat in thin slices, so anything thicker will be fine. As long as you have a flat-top grill, you should be able to work on it right away. Strips of beef steak are drowned in a filling of onions, peppers, and cheese for this tasty take on the classic sandwich. English cheddar is listed here because it is quick to grate and melts quickly. If youre not sure what to get, look into Webers Gourmet BBQ System Griddle.

    How To Make Philly Cheesesteaks

Start by making seasoned garlic butter. Place the softened butter in a small bowl and press, mince or grate a garlic clove into the butter. Use a knife to combine the garlic and butter fully.

Slice a baguette in half the long way, then widthwise.

Spread the garlic butter on both sides of the French bread halves.

Heat a large skillet over medium heat and place the buttered French bread in, buttered side down, to toast. Press down with a spatula for even browning.

Meanwhile, dice a sweet white onion.

Remove the toasted bread from the pan and set aside. Heat a drizzle of olive oil in the now-empty skillet. When hot, add the diced onion and cook until softened. Remove the onions from the skillet to a small bowl.

Place the ribeye steak on a cutting board and slice into very thin slices.

Heat another drizzle of olive oil in the now-empty skillet over medium heat. Add the sliced ribeye and cook until browned. Season with salt and pepper and add back in most of the diced, cooked onions. Divide the beef mixture into two piles in the skillet and top each with a half piece of provolone cheese.

While the cheese melts, brush the insides of both toasted baguettes with mayonnaise.

Place the bread, mayonnaise side down, on top of the melted cheese and beef mixture in the pan. Use a spatula to scoop the filling into the bread, flipping to catch anything that might try to fall out.

Serve the Philly cheesesteak sandwiches hot.

    When Was The Cheesesteak Invented

    The record here is murkier.

One story holds that a Pat’s employee, Tony Lorenzo, who tired of the same old sandwich, added cheese about 20 years after Pat’s opened. So that would put the birth of the cheesesteak sometime in the 50s. Others put the date at 1949.

According to Harry’s grandson, Frank Olivieri Jr., Lorenzo worked at the Ridge Avenue location. Pat, he said, did not want to put cheese on the sandwiches in South Philadelphia.

“Pat never wanted cheese at his original shop because he tried to keep sort of kosher for all his Jewish friends,” Frank Olivieri told the Inquirer in 2015. He said his father, Frank Sr., introduced cheese to the South Philly location.

“Then my dad discovered Cheez Whiz, and it was perfect, because he could just hide the can at the edge of the grill where my grandfather wouldn’t see it. He started serving it to people anyway, like, ‘Try this!’ and it became the most popular way to order.”

What Cheese Goes On A Philly Cheesesteak Sandwich

American cheese, deli provolone, or Cheez Whiz are the only acceptable cheese options for a real cheesesteak. I recommend white American cheese.

If you use provolone, use the soft deli kind. Avoid aged provolone, which tastes too strong and does not melt as well.

John Kerry made an enormous unforced error in his 2003 Presidential campaign when the candidate, already battling an out-of-touch reputation, attempted to order a cheesesteak with Swiss cheese at Phillys famed Pats King of Steaks. How To Make A Philly Cheesesteak

If you cant get to Philadelphia easily to pick up a cheesesteak sandwich, then your next best shot is to make it at home! The layout of the sandwich is simple , but the details are important. Here are a few key things to consider when making your sandwich:

    • You want your steak to be thinly sliced. If possible, you can have your butcher shave it for you. At home, you can stick the steak in the freezer for 10 minutes to make it really stiff and then shave it with your sharpest knife. Trim off any large pieces of fat, but some fat is good.
    • The original cheesesteak can be ordered with only steak or with steak and onions . Personally, I like onions and bell peppers, so I do both. You can make it your own since you are making it at home!
    • The onions and peppers need to cook much longer than the steak so cook them first, separately and then combine everything together with the cheese to finish the dish.
