In a bodega, a chopped cheese often starts off with one or two pre-formed hamburger patties. At home, I like to start with an 80/20 mix of ground beef so there is plenty of fat in the filling. If you go with something leaner, you might want to add a drizzle of oil to the pot before cooking .
If you use an 80/20 blend though, just add the ground beef to a pot over medium-low heat and let the beef slowly cook, rendering out the fat. Stir regularly as the beef browns. After the beef is browned, add the onions and garlic, and stir them into the beef. They will essentially cook in the rendered fat from the ground beef. After 4-5 minutes, they will be softened.
Season the beef filling with salt, pepper, and Worcestershire sauce. The filling is now ready to use in your chopped cheese sandwiches.

How To Make Philly Cheesesteaks
Start by making seasoned garlic butter. Place the softened butter in a small bowl and press, mince or grate a garlic clove into the butter. Use a knife to combine the garlic and butter fully.
Slice a baguette in half the long way, then widthwise.
Spread the garlic butter on both sides of the French bread halves.
Heat a large skillet over medium heat and place the buttered French bread in, buttered side down, to toast. Press down with a spatula for even browning.
Meanwhile, dice a sweet white onion.
Remove the toasted bread from the pan and set aside. Heat a drizzle of olive oil in the now-empty skillet. When hot, add the diced onion and cook until softened. Remove the onions from the skillet to a small bowl.
Place the ribeye steak on a cutting board and slice into very thin slices.
Heat another drizzle of olive oil in the now-empty skillet over medium heat. Add the sliced ribeye and cook until browned. Season with salt and pepper and add back in most of the diced, cooked onions. Divide the beef mixture into two piles in the skillet and top each with a half piece of provolone cheese.
While the cheese melts, brush the insides of both toasted baguettes with mayonnaise.
Place the bread, mayonnaise side down, on top of the melted cheese and beef mixture in the pan. Use a spatula to scoop the filling into the bread, flipping to catch anything that might try to fall out.
Serve the Philly cheesesteak sandwiches hot.

When Was The Cheesesteak Invented
The record here is murkier.
One story holds that a Pat’s employee, Tony Lorenzo, who tired of the same old sandwich, added cheese about 20 years after Pat’s opened. So that would put the birth of the cheesesteak sometime in the 50s. Others put the date at 1949.
According to Harry’s grandson, Frank Olivieri Jr., Lorenzo worked at the Ridge Avenue location. Pat, he said, did not want to put cheese on the sandwiches in South Philadelphia.
“Pat never wanted cheese at his original shop because he tried to keep sort of kosher for all his Jewish friends,” Frank Olivieri told the Inquirer in 2015. He said his father, Frank Sr., introduced cheese to the South Philly location.
“Then my dad discovered Cheez Whiz, and it was perfect, because he could just hide the can at the edge of the grill where my grandfather wouldn’t see it. He started serving it to people anyway, like, ‘Try this!’ and it became the most popular way to order.”

What makes a Philly cheesesteak authentic? First of all, it probably needs to be made in Philadelphia hence the name. Second, traditional cheesesteak is made with thin sliced ribeye steak and cheese, served on an amoroso roll. Onions are a common topping for authentic cheesesteak sandwiches.
Depending on where you buy your cheesesteak, it may be topped with American cheese, provolone cheese, or cheese whiz.
In places of the country other than Philadelphia, bell peppers and mushrooms are common toppings. If you do not like these toppings, they are completely optional and can be omitted.

How To Assemble The French Dip:
1. Saute Mushrooms until golden and soft. Sprinkle with garlic salt and pepper to taste. Remove mushrooms from pan and set aside. In the same skillet , add 1 1/2 cups beef broth, season broth to taste then remove from heat this broth is your au jus dipping sauce.
2. Heat a large pan over medium heat. Add a small pat of butter and when butter is done sizzling, Saute the cut side of the rolls just until golden. Divide the pastrami meat evenly among the four sandwiches. Top with cheese and mushrooms.
3. Bake at 450F for 4-5 minutes or until cheese melts and meat is hot.
4. Serve each sandwich with an individual ramekin of AuJus Dip with every bite.

How To Make A Salami Sandwich With Cream Cheese Spread:
1. In a small bowl, combine 8 oz cream cheese, 1/4 cup green onions, 1/4 cup dill, and press in 1 garlic clove. Mash herbs into the cream cheese until incorporated
