    We prefer to pull our steaks out of the refrigerator about 1 hour before grilling and generously salt the steak on both sides. It is important not to salt the steaks right before grilling. The salt needs that hour to absorb the extra moisture. With our method, we also prefer to allow the steaks to come up to room temperature before grilling. So typically, once salted they will sit in the refrigerator for ½ hour and then on the counter for ½ hour. There seem to be varying differences on whether it is necessary to bring the steak to room temperature before grilling. We have just found better results with the latter so it is our personal preference.

    Other Methods to Remove Moisture :

    • About 24 hours prior to grilling, pull all the wrapping off the steaks, place them on a plate, and put back into the refrigerator. The refrigerator has a low humidity and will allow for the moisture to slowly evaporate.
    • Prior to grilling, take a paper towel and blot the steaks to soak up any remaining moisture.

    In order to get the best of both worlds, we recommend coupling some Grill Grates with your pellet grill.

    I actually determine that by the internal temperature. If the internal temperature of the meat is 50 degrees when I put it on the grill, and I want to cook it to 125 degrees. I need to raise the internal temperature by 75 degrees, so that means halfway would be when the meat has come up 37 degrees or reached an internal temperature of 87 degrees.     You must rely on a really good meat thermometer, this is a MUST! An instant-read digital thermometer is the best and easiest to use. This is the safest way to ensure your internal temperatures are accurate and the meat is safely done for consumption.

    I use the ThermoWorks thermometers, and they are amazing. I have the Thermapen and it is one of my favorite pieces of kitchen equipment. I also have the Smoke which is a wireless leave-in probe and is one of my most-used grilling tools.

    Temperature Guide for Steak:

    • Medium Well: 150-155 degrees F
    • Well Done: Just have a cheeseburger

    Remember that your meat will continue to cook after you remove it from the grill, so allow for a 3-5 degree raise in temperature while resting. Check, check, check that temp!

    Speaking of resting, always allow your steak to rest for 5 minutes before serving. This allows the juices to tame down and remain in the meat when you start cutting into it.

  • Set your grill at 180 degrees. After applying salt and pepper, place the steak in the grill. Make sure you place the meat at an area where most of the smoke would flow, but not in a place thats exposed directly to heat. For this purpose, place the meat at the top rack of the grill.
  • The amount of time to smoke the meat will pretty much depend on how thick it is. It is best to check the temperature of the meat from time to time. Check it 15 minutes after you start grilling and flip the steak for even heating. Then check the meat after every 5 to 10 minutes after that.
  • Using your thermometer, check the steak if it has already reached 100 to 110 degrees. If it has, then remove the meat and set the grills temperature to 500 degrees. At this point, get your grate but only after heating it for a while. Generously coat your steak with the searing rub and place it on the grate.
  • When grilling a solid medium rare steak, the internal temp 130 to 135 degrees. As for medium, it should be at 145 degrees, while medium well should be at 155 degrees.

    It Really Works As Advertized

    Really like this appliance and it is a light weigh item which is perfect for me. In its package, a free griddle is offered but you have to pay for shipping. That is not the problem but they canceled my order and I am having a difficult time reaching them to see if I can reorder when they have restocked griddles, I have only used it once grilling steaks but it will be interesting when I grill seafood. It is worth the buy.
