    Getting Rid Of The Moisture

    Angry BBQs favorite : Salt!

We prefer to pull our steaks out of the refrigerator about 1 hour before grilling and generously salt the steak on both sides. It is important not to salt the steaks right before grilling. The salt needs that hour to absorb the extra moisture. With our method, we also prefer to allow the steaks to come up to room temperature before grilling. So typically, once salted they will sit in the refrigerator for ½ hour and then on the counter for ½ hour. There seem to be varying differences on whether it is necessary to bring the steak to room temperature before grilling. We have just found better results with the latter so it is our personal preference.

Other Methods to Remove Moisture :

    • About 24 hours prior to grilling, pull all the wrapping off the steaks, place them on a plate, and put back into the refrigerator. The refrigerator has a low humidity and will allow for the moisture to slowly evaporate.
    • Prior to grilling, take a paper towel and blot the steaks to soak up any remaining moisture.

Three Heat Up The Grill Grates For Searing

Pellet Grills work great for smoking large cuts of meat like brisket, pork butt, and ribs, and maintaining a near perfect consistent air temperature, much like the best competition smokers promise to do.

The downside is their ability to sear at high heat like you would over direct coals or a propane gas burner.

In order to get the best of both worlds, we recommend coupling some Grill Grates with your pellet grill.

Grill Grates are specialtywellgrates that sit right over the existing grates on your pellet grill that help capture and direct all that ambient heat and give you a nice searing station in the corner of your pellet grill.

They claim to get temperatures up to 200°F HIGHER than the temperature you set your pellet grill, meaning even if your nice Traeger only goes up to 400°F on the control panel, you can still sear some steaks, pork chops, or chicken at 600°F at the beginning or end of the cook to give them a nice sear.

Make sure to measure the size of your current grilling area.

While you absolutely CAN cover your entire pellet grill with Grill Grates, like if you were doing a batch of burgers for a big party, in our case we only want to cover PART of the pellet grill, maybe 1/3 to 1/2 of the cooking area for our pellet grill steaks.

That way you can move food back and forth as your are smoking or searing the steaks or burgers, etc.

    Traeger Steak Temp & Time

When we talk about Traeger steak, we usually use the term steak doneness. Steak doneness describes the degree to which we have cooked the steak and it will eventually affect the taste, color, and appearance of the steak.

The doneness of a steak is an indication of how well-cooked the meat is and is based on its color, juiciness, and internal temperature.

USDA Recommended Safe Minimum Internal Temperatures

The USDA has released a list of safe minimum internal temperatures for various types of meat and poultry.

The recommended safe minimum internal temperature for beef, lamb, and veal is 145 degrees Fahrenheit.

For ground meat, the safe minimum is 160 degrees Fahrenheit and

For other poultry like chicken or turkey, its 165 degrees Fahrenheit.

Some of you might be thinking, 145° F is too hot for meat! You should keep in mind if you make your steak at this temperature, IT WILL BE OVERCOOKED!

There are roughly six degrees of Traeger steak doneness. The most popular degrees for steak are medium and well-done, with well-done being the more popular choice.

To start, its important to know that you should cook your steak on a Traeger grill for about 10-12 minutes for medium rare at 400 degrees Fahrenheit.

If you want your steak to be medium, Traeger cooking time for steak should be for 12-14 minutes at 400 degrees Fahrenheit.

For a well done Traeger steak, cook it for about18-20 minutes.

    How Your Cooker Works

Pellet Grilled Ribeye Steaks Using GrillGrates

Many people do not realize that pellet grills are actually convection cookers. The firepot where pellets are ignited is covered by a deflector plate. A fan then distributes air and heat around the cooking chamber in a convection-style manner.

Because of this, you might logically think that a pellet grill cant sear since direct heat grilling isnt used. While thats somewhat true, its certainly possible to get a sear and beautiful grill marks on a pellet grill steak.

It should be able to register the temperature quickly and precisely. The Thermoworks Thermapen is good for measuring the internal temperature of meat quickly and accurately.

I actually determine that by the internal temperature. If the internal temperature of the meat is 50 degrees when I put it on the grill, and I want to cook it to 125 degrees. I need to raise the internal temperature by 75 degrees, so that means halfway would be when the meat has come up 37 degrees or reached an internal temperature of 87 degrees. It has come halfway up to the desired temperature. I hope that helps.

Why Cook Steak On The Traeger

If you are looking for a black and blue steak with a dark purple cool center, you need to sear that at 900°F for a minute per side. You can’t get that on the Traeger. Because the Traeger grill cooks indirectly, a dark charred sear is not achievable without completely overcooking your steak. But that is ok. If you are most interested in flavor and looking to find new wrinkles of flavor, this one is for you. It doesn’t get more simple than steak, salt, pepper, and your Trager grill.

Remember that your meat will continue to cook after you remove it from the grill, so allow for a 3-5 degree raise in temperature while resting. Check, check, check that temp!

Speaking of resting, always allow your steak to rest for 5 minutes before serving. This allows the juices to tame down and remain in the meat when you start cutting into it.

    • 2 Steaks, Cuts of your choice
    • Salt and pepper

  • Set your grill at 180 degrees. After applying salt and pepper, place the steak in the grill. Make sure you place the meat at an area where most of the smoke would flow, but not in a place thats exposed directly to heat. For this purpose, place the meat at the top rack of the grill.

At this point, get your grate but only after heating it for a while. Generously coat your steak with the searing rub and place it on the grate.

That can be Smoked Cheesy Potatoes, mashed potatoes, grilled veggies, smoked cauliflower or pesto cauliflower, or a nice fresh salad.
