Ethan Brown Is Building A $40 Billion Vegan Meat Company
During the WSJ event, Brown was pressed about whether the plant-based meat bubble has poppedor if the category is losing momentum. The reasons to do what were doing and the reason for the consumer to engage with what were doing strengthens every day, Brown said.
Theres the pandemic. Theres recession. Theres gas prices. Theres all this noise out there, but what continues to strengthen is the need to do what were doing, he said. Were getting better at that every year and with reason to do it in terms of climate, human health, the overall environment , and animal welfare all those reasons continue to be present and increase in importance.

Chefs Top Tip: Dont Knead Too Long
You knead the seitan like a pizza dough BUT you dont want to knead it for too long. You have to be quite conservative with your kneading while at the same time kneading it just long enough to activate the gluten.
I found about 2 minutes to be just perfect, but its more about the feel than the time. It will go from sticky and soft to firm and when you stretch it, it will sort of snap back.
The reason you dont want to knead it for too long is that the longer you knead, the tougher the texture will be.
On one of our recipe tests, Jaye took over the kneading and he thought it was supposed to be for 4 minutes, well lets just say our jaws got such a workout, we ended up cutting those vegan steaks into very thin strips and then putting it on sandwiches. It was still good, but not juicy and tender like you want a delicious vegan steak to be.
If you knead it for an even shorter time than we did here you get a texture that is so tender that it doesnt really work for a vegan steak, but works well for different things like seitan strips if you want to use this for something else.
We adapted this recipe to make some soft and delicious seitan strips and then put those into a vegan shawarma, so if youre looking for different ways to use this steak recipe then thats a great option too.

As I mentioned above, the spinalis dorsi is not a commonmuscle. I hear tell of it being sold at giant-box wholesale stores from time totime, and you can certainly buy them from specialty retailers online. If youhave a very good local butchers shop, you can most likely get one there. Butotherwise, if you want a ribeye cap, youre going to have to make one yourself.

Ingredients For Vegan Steaks:
This recipe builds a lot of flavor into the vegan steaks, so that the seitan is delicious enough to eat plain.
For aromatics, I sauté onion until sweetened and soft, then add garlic to cook off its rawness. The cooked onion and garlic are blended til fairly smooth with salty and umami rich ingredientsvegetable broth, red wine, soy sauce, vegan Worcestershire sauce, and tomato paste.
These ingredients lend a savory meatiness to the final seitan steaks.
The dough is enriched with oil, which gives a really nice texture to the seitan. Fat keeps the gluten from developing too tough and inhibits any rubbery texture.
To further improve the texture I add black beans and chickpea flour. Black beans also help the seitan turn a darker color, making them visually steak-like.
And of course you cannot make seitan without vital wheat gluten! Yes, that does mean there are no substitutes for this ingredient. Unfortunately this recipe is not appropriate for anyone sensitive to gluten.
