How to Cook the Best Whole Chickens on the Weber Charcoal Grill

Broilers and fryers are the next two sizes up and are the most common chickens sold in the US. Six to eight weeks in age, they have a good balance of flavor and tenderness, and are sized just right to feed four.

I can fit a couple of fryers on my grill at the same time, making them ideal for larger dinner parties.

Grilled Spatchcocked Chicken Marinade:

Once spatchcocked, the only other prep involved with grilled whole chicken is seasoning the bird. Feel free to keep things as simple as youd like, using your favorite spice blends or dry rubs, or whip up a quick grilled chicken marinade.

This particular grilled spatchcocked chicken recipe calls for a flavor-forward chili-lime wet rub, made with loads of fresh lime & garlic, staple spices, & honey for subtle sweetness to offset the zesty & spicy flavor.

How to use this chili lime marinade. Stir together fresh lime zest & juice, honey, & spices , drizzling in a little neutral oil to bring everything together. This marinade is a very thick paste, similar to wet rub. Slather it all over the spatchcocked chicken. Be sure to use your hands to work the marinade between the meat & skin, which helps ensure super flavorful grilled chicken.

Suggested marinating time. Aim to marinate the chicken at least 60 minutes prior to grilling, though 12-24 hours is ideal.

How To Make Grilled Whole Chicken From Scratch

  • Spatchcock your chicken: First, when you buy your chicken, ask the butcher to spatchcock it for you.
  • Trim your chicken: Next, trim away as much excess fat as you can.
  • Season the chicken: After, pat chicken dry with paper towels and salt the skin all over. Then, lift the skin on the breast and season it underneath.
  • Make the marinade: To make the marinade, whisk all the marinade ingredients in a large bowl.
  • Next, rub the marinade all over the chicken, especially under the skin. After, add the chicken to the marinade, skin side up, and marinate it in the refrigerator for two to four hours.
  • Preheat the grill: When ready, preheat the grill to 400 degrees F on medium-high heat. Rub the grill surface with olive oil or your favorite grilling oil.
  • Cooking chicken: After, place chicken over indirect heat on the hot grill skin side up and cook for 45 to 60 minutes. Rotate the chicken as needed to keep the skin from burning. Flip after the internal temperature is 110 degrees F.

    There is a time and place for doing that , it really doesnt take that much longer to cook a chicken whole over charcoal.

    For every 2.2lbs of chicken, it will take around 45 minutes to cook over medium heat charcoal.The good thing about rotisserie cooking, if you want to cook two birds at once, it doesnt affect the cooking time. The 45 minutes per every 2.2 pounds is per bird, not in total.
